From what I understand, or at least what I found, speck lost his muscles because he lost. Basically in Baki mental strength and mental projection is everything, speck saw himself at his prime because he’d never tasted defeat, but after finally losing his mind and body simply came to terms with reality, and he reverted to being an old man. Spoilers after this by the way, later we see him regain his muscles in his sleep, as though his will is renewed. Mental strength in Baki is as important as physical strength.
