It’s probably more of keeping the cuts consistent that looks hard imo. My guess is that they’re making use of the cutter’s edge to apply a large force to a small area along with the that metal bar to make the candy into a lever. That’s how they’re able to break it more easily. But because they have lots of practice in the technique, they’re able to do it so fast. I bet that if I were to do it, I would fail to cut it so much. It’s very satisfying.

Just wow, you know seeing those sweets being made from square 1 you could never guess what the final product would look like (i tried but failed each time i thought i saw through) and at the end i saw so many stuffs drawn into the other sweets i just had my jaw wide open from amazement...
