The best thing on top of blueberry muffins is a mixture of sweetened coconut, almond flour and butter. Mix well, then stir in a few fresh blueberries. So good.

@@kaskahea1274 Haha, I knew there was not a big rush to do it, but I am so prone to forgetting to do things like this I try to do them as soon as I can. I got this recipe from the back of a Krusteaz Gluten Free Wild Blueberry Muffin mix box. I have made these several times, and most people love them as long as they like coconut. So make your muffins however you like, then mix the following ingredients together- 1 cup shredded coconut (I use sweetened shredded coconut because that is all I could find in my supermarket), 1/2 cup almond flour, 2 tablespoons of softened butter. I mix these fairly well, and then I add a good handful of fresh blueberries and gently stir them in. This is supposed to top 12 regular size muffins. I usually will make a 1/2 recipe more so I have a good amount to top each muffin with. So I mix 1 1/2 Cup coconut, 1 cup almond flour, 3 tablespoons softened butter. You can play around with how many fresh blueberries you want to add. I cook my muffins however long I normally wood, and make sure the coconut on the top is nicely browned. I use Tulip paper cupcake liners for my muffins, and because the liners stand a bit higher the topping does not fall off so easily. I hope you enjoy!
