www.amazon.in/... Kadalai Mittai is a traditional sweet made with peanuts and jaggery. It is a very tasty and nutritional snack cum dessert. It is also called as kadalai urundai, kadala mittai, kadala barfi, in Tamil, kappalandi mittai in Malayalam, Moongfali Chikki, gud ki chikki in Hindi, peanut barfi, peanut bar, Peanut Jaggery bar in English.
Ingredients and method:
Take 200 gms or 1 cup of peanuts.
Dry roast in a pan for 3 to 4 min. Till the colour darkens and a nice aroma arises. You will also hear a crackling sound.
Cool it completely, rub between your palms and remove the skin.
Seperate them into halves.
Heat 1 cup of jaggery with 1/2 cup of water till it dissolves.
Strain this liquid to a pan and bring it to boil till the jaggery reaches soft ball consistency.
Add the roasted and deskinned groundnuts and cook well for a minute till it starts bubbling again.
Add a pinch of Cardomom powder and mix well. You can add a pinch of dry ginger powder too.
Add 1/4 tsp ghee for added flavour and taste.
Switch off and pour this over a greased plate or butter paper or foil paper.
Spread it immediately. Use a foil or a butter paper on top and roll into equal thickness with the help of a rolling pin.
Once it reaches lukewarm stage cut it into desired shape.
Cool completely and enjoy.
Alternatively dust your hands with rice flour or wet your palms with water and make small round balls of kadalai urundai.
