Hardcore Music & Soft-Shell Crabs: Chef Night Out With Henrique Fogaça

A MasterChef Brasil judge and lead singer of hardcore band Oitão, Henrique Fogaça is a big, tattooed, ogre-like dude. His look contrasts with Sal Gastronomia, a small restaurant he runs in São Paulo. As he makes soft-shell crab-the place’s most lauded dish-Fogaça gets his diners' palates ready: “You eat everything, the brains, the eyes, it’s really gross. But it’s good.”
In this episode of Chef’s Night Out, we take a food tour around the city with Fogaça, Badauí (CPM22 member) and Checho Gonzales. Amidst dirty jokes and laughs, they eat up tapioca dumplings and have a cold beer at bar Aconchego Carioca, then gobble up a bloody bife ancho (ribeye steak) at restaurant Arturito.

Guilherme Vaz Worcestershire Sauce in portuguese is called Molho Inglês. He said Creme Inglês, so actually Worcestershire Sauce is correct.

When he says "creme inglês" @ 1:48 he means custard, not Worcester sauce ("molho inglês" in Portuguese).

I think you're right but I only learned a little Portuguese. Here in France, "crême anglaise" is a sweet, creamy, eggy liquid used on a plate on which perhaps a piece of dessert cake is placed, and "sauce anglaise" is Worcestershire sauce (and is often hard to find in France).

This guy has become a great chef in Brazil. And you guys know what? His last dish is from my region, the amazon region in Brazil. Jambu, tucupi, Banana da terra, are some of the ingredients one can find in the backyard of his or her house. Come to the amazon and savor our dishes and behold our nature. I know he's referring to the molting process that a crab goes through in the intro but I'm pretty sure there is a certain type of crab that is called a soft-shell that is traditionally used.. EDIT: ahh, after a quick search I've learned there's a few species typically used but yes it's just the molting process.. mmm I fucking love soft-shell crab.

It has to do with the replacement of the shell time and all crabs do it, unless they are hermit crabs which borrow discarded shells to live in and just move on if they get too big. In NYC, soft shell crabs were only available for a very short season, I recall. All the local crabs they could get from that region were going through their seasonal shell-change, or most of them were.
