Oh god the pizza style chicken parm. I worked as a prep cook at Cheesecake when they rolled it out 5-6 years ago. Kind of a disgusting process. Taking chicken breasts and putting them through a cheese shredder attachment on the mixer. Season the now gooey chicken and portion and flatten before freezing the chicken pies. After they’re frozen, egg em and bread em.
