We apologize for the sound quality of this video! Because of the water and salmon, we used our GoPro instead of our usual camera and microphone. We don’t have a mic mod for the GoPro so, unfortunately, sound quality suffers.
We limited out on Sockeye Salmon after our dip netting trip! We had such a blast and we were able to harvest roughly 90 pounds of salmon after processing! Needless to say, we are super excited to enjoy fresh salmon and can’t wait for next year’s trip!

Recipe in video:
Thai Chili Sauce
1 Cup (250 g) water
1 Cup (238 g) rice vinegar
¾ Cup (150 g) granulated sugar (we used Sugar in the Raw)
2 teaspoons tomato paste
1 habanero pepper, finely diced (about 2 teaspoons)
2 teaspoons fresh ginger root, minced
1 teaspoon garlic, minced
Slurry
1 tablespoon cornstarch
1 tablespoon water
In a medium saucepan over medium-high heat, add water and vinegar.
Add sugar, tomato paste, chili (habanero) pepper, ginger, and garlic. Stirring frequently, boil for 10 minutes, or until the sugar is fully dissolved.
In a small dish, combine cornstarch and water to create a slurry. Stir together until no clumps remain.
Pour the slurry into the saucepan and stir to combine. Continue to cook the sauce, stirring occasionally, for about 8-10 minutes. The mixture will thicken slightly and should coat the back of a spoon. (Don’t worry if the mixture is still somewhat thin; it will continue to thicken as it cools.)
Remove from heat and allow the mixture to cool. If you feel like it is too thick after cooling, whisk in ½ teaspoon of water to thin it out as desired. It can also be thinned by warming the sauce slightly in the microwave at 20-30-second intervals, stirring in between.
Sweet Chili Sauce - I Am Homesteader
Preparing the Salmon
Remove skin from the salmon and cut it into bite-sized pieces. Pour ½ of the chili sauce onto the salmon and air fry for approximately 5 minutes. Flip the salmon and cook for about 5 more minutes or until the internal temperature reaches 145 degrees Fahrenheit. Serve over rice and additional chili sauce. Add your favorite vegetable.

We love your story and are faithfully following another couple in the area as well. We have found many Portugal homesteader sites that the couples have got to know each other for an occasional dinner and work sharing lifestyle for the big jobs. Please keep it coming. My favorite salmon recipe is Yassa Salmon. It's a west African recipe usually made with chicken, but also commonly made with fish. Poisson Yassa: 4 salmon fillet halves 4 onions -thinly sliced 3 tbsp oil for frying 1 1/2 cups water Marinade ingredients: Juice of 4 lemons Zest of half a lemon 3 or 4 garlic cloves, crushed 4 tsp salt 3 tsp black pepper 1 tsp cayenne pepper 1 tbsp Dijon mustard (or use yellow mustard) 3 Tbsp oil for marinade (In Africa they would commonly add a "Maggi cube" which is a type of bullion. You could add a bullion cube or some bullion powder) - Mix all marinade ingredients in a (non-reactive) bowl to form a marinade Place fish in this marinade -keep in fridge for 15 mins. Remove the fish fillets, but reserve the marinade Place 3 tbsp oil in a large skillet and heat up Fry salmon fillets on medium high for about 4 minutes on each side, then remove from the pan and reserve Fry onions in this skillet on medium heat til translucent (Add more oil if needed) Put the reserved marinade and 1 1/2 cups water in the pan with the onions and let come to a simmer. Reduce heat to medium low, and place the salmon fillets back in the skillet with the onions and marinade, and cook salmon with the marinade a further 4 minutes on each side or until done (it flakes with a fork) Taste for seasoning Serve with sweet or Irish potatoes, or rice

Nice work on the Salmon you 2 they look fantastic! Always enjoy watching the dip netting videos whether its copper river reds or out at the ocean! Katie you were a trooper getting out there with that net as I know from being married to my wife for 26yrs who is just over 5ft that the struggles are real when your tiny doing things like that. The Thai salmon recipie is now in my folder of stuff to try next as it looked AWESOME! Thanks for taking us along with you!

It seems more like catching than fishing. Great way to get groceries for the freezer. The fresh salmon are so tasty and have been a welcome addition to our weekly cooking menu.

If you are not aware, Chitna/Copper River is a separate permit to the Kenai fishery dipnet. in other words you can take another 35 fish out of the copper. It is a bit of a drive to get there, and you’ll require your side by side, but I recommend you watch some videos about it and see what you think. Also I too was wondering if y’all are doing alright bit has been a while. Hope no one is hurt.

pro tip, you can dipnet lower cook inlet AND copper river if youre looking to really stock up for the year (they are different permits). We eat salmon multiple times a week so the 70 fish last us just a whole year and we share a ton.

Nice hookup with the Sockeye run! I got a chance to go fishing in Yakitat for the silver salmon run. We hooked our limits on fly rods every day and then we got a guided float trip and a saltwater guided trip. I came back with over two hundred pounds of salmon, halibut and several four foot ling cod as well! That halibut was like lobster, oh lord it was tasty! Loved the intro with the animals, another great video! 💪👊👍

Wow nice haul of fish. I tried and real simple way to enjoy the salmon that is scraped off with the spoon. You take and make a spaghetti sauce and boil up some spaghetti pasta .when that is ready put your salmon that is scraped with the spoon .Mix it all together like you would with hamburger .Let it simmer about 6 or 8 minutes and it will cook the salmon. It is SO good. Salmon alfredo is good too with salmon.

Seeing you eat white rice. When you refrigart rice it changes from a starch to a fiber . Much more better for you. Just learned that a few months ago. I have a chunky son and it has helped.

I was wondering if the cabin was dried in yet. Seems like awhile since seeing a vlog. I was able to binge watch since finding you. Pressure cooking always scares me... Never could 'can' , always worried about explosion or poisoning someone. Sill, I know. Glad you're back.

What we have in Ky that might be similar to the salmon run and all the excitement is when the corn comes in 😅 Families get together and shuck, silk and scrape to make enough creamed corn for each family member’s freezer.

Hey there! I watched this video and loved it! So you caught something else along with all that wonderful Salmon: A new Sub. BTW, I am in Northern Quebec (Very similar to Alaska). I have Brook trout, Artic Char, Lake trout, Walleye and Northern Pike. I raise meat rabbits... But Nothing beats Sockeye! You are lucky to have that ressource! Good job guys!
