My 6 year old niece is already an enthusiastic gardener and last fall insisted her mom could make a carrot pie using the carrots she grew. So, when the carrots were ready to harvest they used them in a recipe similarly to sweet potatoes and pumpkin purée to make carrot pie. My niece had complete confidence in the outcome but her parents…..not so much. When it came to tasting it the pie was a complete hit…much like sweet potato pie. (Don’t forget the whipped cream) We’re still not sure where or why a 6 year old would know about carrot pie, but it’s a story and memory we’ll cherish for a long time. 👍🥕🥧

Caught him in the middle trying to sign off the video. How cute was that. The cake looked delicious and I’m glad you all enjoyed it. I once harvested carrots from frozen soil in Idaho one winter. Quick cake tip I learned from a comment several years ago. No need to spend extra on parchment rounds or cut your own an unbleached basket style coffee filter fits an 8 in round perfectly I even use them in my 9in and cakes come out clean every time. Spray the pan flatten the filter and spray again if not stuck down, peels right off like parchment and cheaper than buying the rounds. 👍
