You have explained it very well . We are brahmins and I always wanted to know the authentic method of making uppasaaru . 1. Can we skip garlic 2. Some people don't mix khara with avarekalu and Kattu water , which is the right way to do it 3. What us the difference between uppasaru and bassaru . Would be very happy if you can clear my doubts.

1 you can skip garlic no problem Ur convenient. 2 upsaru same method, But Batsaru Method 1: Bale sambar powder, coconut, jeera jeera, tamarind, garlic, onion grind properly next cut water mixing together finally getting batsar. Method 2 : jeera black pepper onion garlic roasted together and coconut tamarind finally properly grinding mix the katwatar finally boil properly all grinding mixture getting batsar.
