Please make a video of mangalore/ udupi style midi mavinakai uppinakai base (masale) if you can. Do you use vinegar and ground mustard in the recipe? For some reason the pickle base color is much lighter and brighter in some udupi pickles than the base used in bayalu-seeme/old mysore style.

I have one midi uppinakayi recipe, but this is malenadu style: vegrecipesofkarnataka.com/66-mavina-midi-uppinakayi-tender-mango-pickle.php In Udupi - Mangalore they use more mustard to get lighter colour.
