I find this interesting but the reason why the fish go still when turned upside down is because of a real life thing called Tonic Mobility. It's a calming state that a fish enters when turned upside down. I think it has to do with blood flow and blood pressure but I do know it's very commonly used with sharks to calm them down long enough for researchers to collect their data and release the shark.
