In Island wird seit Jahrhunderten Brot in kochendem Wasser von unterirdischen Wärmequellen gemacht. Allerdings legt man den Teig nicht einfach so ins Wasser sondern in einem Topf oder einer gebrauchten Milchtüte. Nach 24 Stunden ist das lavabröd fertig und schmeckt himmlisch.

When the bread is baked, this layer becomes chewy and helps create a characteristic crust. Controls the Rise: The brief boiling "sets" the crust by slowing down the dough’s expansion during baking. This allows the bread to keep its shape and results in a denser, chewier crumb structure, as seen in bagels. Enhances Browning: Boiling can also help improve browning during baking, especially if the water has an additive, like malt syrup, honey, or baking soda. The sugars and alkalinity increase Maillard browning, creating a deep golden-brown color. Though this method is traditional for bagels and pretzels, it’s less common for other types of bread. The boiling step is what gives these breads their distinctive texture and appearance.
