I love making hamburger jerky. The flavor combinations are endless and only limited by one's imagination. I never tried using cure in mine though. I can see where it'd be a good idea since you can't get every bit of fat out of ground meat. And fat is what's responsible for turning jerky rancid... if it lasts that long. Lolol I'll be trying it with cure next time.👍🏼 TFS

@@OldfatguyCa Yes it would, that makes it more appealing too. Otherwise it's just kinda brown, but I still scarf it down anyway since it's so easy to make with such great results. It's sooo good. And much easier than trying to get uniform slices even off a partially frozen lean roast with a good sharp knife. I have a home slicer, but it's older and needs serviced. I've cut a lot of jerky meat with it over the years and many types of garden vegtables to dehydrate to make seasoning blends. So it's long over due for servicing.

@Ken Allen I did buy a jerky gun to extrude either round sticks or flats. Wish I would have saved my money. It's a pain to clean is my biggest complaint with it, otherwise it does work fine. There is also a bit of a learning curve to using the jerky gun and getting consistent strips. I think next time, I'll make smallish meatballs and weigh them as I go to get consistent pieces and then use my tortilla press to flatten into jerky chips.
