Hawaii's Pickle Lady

Pickled ginger is usually made from very young ginger with pink tips that can cause the ginger to turn pinkish. Some commercial ones contain food coloring and chemicals. This recipe only contains 3 ingredients including the ginger.
It has a very long shelf life (usually 6 months or more) and is usually eaten with sushi but some people put it in salads, seafood and meats.

Thank you so much for this recipe! I got sick and tired of buying pickled ginger with aspartame and other chemicals in it. It’s not worth the health risk.

I've even tried the old yellow ginger and it works fine. You can just use a vegetable peeler if the mandolin isn't available.

But remember, you must use the young pale yellow with red tips. In Hawaii, it's only available in late summer and early Fall. The old ginger is tough and stringy.

Best is the young ginger that comes out late summer and early fall. I tried it with mature ginger and it comes out pretty good. You can also shave it with a vegetable peeler to get it thin.

You could use a melon baller or just a spoon to portion out the ginger BEFORE you freeze it too! ....Or an ice cube tray...

Thanks so much for this recipe and your tips and tricks on ginger. I was lucky to purchase one pound of very tender young ginger last year. I wish I knew your recipe then. Instead, I sliced 1/2 of the roots and put in a jar with vodka to preserve. I also froze the rest whole and I simply grate the frozen root when I need some for a recipe. I hope I can get that tender ginger again and Ill make your recipe. Thank you! I enjoyed your photos from Cambodia and hope you can post some more!

Ginger can be preserved in a number of ways. Sometimes I put it in vinegar. Alcohol and vinegar don't really affect the taste.

@@HawaiisPickleLady Yes, I noticed that the flavor of the ginger wasn't affected, however the Vodka flavor changed a lot...not in a good way...sort of odd tasting. 🙃

Ooooo, I wanna sip some spicy juice from the straining steps...with ice, vodka, and lemon...yum! Now you have me thinking of fermenting ginger to drink the ginger "ale" and cook with the salty fermented ginger. *drooling* This looks much better than the pink stuff from the store, it's more like the Ginger People brand, but yours is more colorfully yellow.

Pink is from food coloring and they also put chemicals. Mine is totally natural.

My method of preserving ginger is the laziest one there is. Just leave it sitting out on the counter in a little box where I keep my onions and garlic and let it sit there for months drying out and withering away into nothing, periodically cutting off little slices to flavor tea and soups and whatnot. Has never molded on me yet!

You can find fresh young ginger in Fresno, CA. I had came across them with local farmers.

Unfortunately not to be found in Vegas. I'm going to Hawaii in November. If I can get some, I'll pickle it and bring it back if it's still there. Usually late summer and early Fall.

It's hard for her to cut it super thin because she's using a very thick chef knife. Instead try a very thin blade sharpened on only one side of the blade... just like the Japanese use for traditional sushi preparation.

Yes, those are my favorite and best knives. Worth the investment. I also have their cookware. It's heavy and rice doesn't stick.
