Well it's true that you'll get rid of a bigger fraction of the heavier components inside your spirit if you destill 3x instead of 2x. But there are also other factors at play like cut points, temperature (≈ destillation speed) & residuals from other runs before (I guess that's why some Hazelburns have a little bit of peat 😅). Also never forget that the casks bring you around 60 - 70% of the overall flavour.
