Heeeyyyyyy Cousin Mirlanda, Just wanted you to know I personally used ur recipe for Cajun Oxtails just now. For some Oxtails I'm cooking 4 fam on this coming "NEW YEARS DAY" celebration. I did exactly like you(I'm cooking 3 pounds)first I rinsed off the meat then I soaked it for 30 min in wht vin & apple cider vinegar plus lime juice. Then I allowed it to sit for 10 minutes in some freshly boiled spring water(I hate to cook with faucet water) I'm picky about my food. Then what I did is use 1/2 can tomato paste, added spring water to it (just enough to coat all the pieces of oxtails). Then I added worchestire sauce, browning sauce, ground coriander, minced garlic, lawry's seasoning old bay and a smidge of brown sugar to the tomato & water sauce. I already had my minced up onions, bell pepper, red pepper and celery all minced up in a freezer bag. I seasoned my oxtails well with all the other spices you used, then drizzled my tomato mixture on the oxtails & drizzled the minced veggies on top covered it & I will allow it to marinate until "NEW YEARS DAY" morning then I will finish them up with the olive oil in pot with a little brown sugar. Only difference is I made my own beef broth already 4 days ago (I added some good merlot to the beef broth)with my spices and I allow my Oxtails to cook 5 hours so the meat falls off the bone & is super tender cooking on a slow simmer once I add the broth. I've already cooked chitterlings, Hog Maws, sweet potato pie, & Butter -milk pie. And Giblet Gravy, Now tomorrow I will cook my blkeyed peas w hamhocks & bacon, plus my collards. 😊On New Years Day just hv fo make Banana pudding, Dressing, fried okra, fried green tomatoes & Buttermilk Honey Cornbread. I'm cooking for a ton of peeps not myself HAPPY NEW YEAR YOU TWO STAY BLESSED😊❤😊❤😊❤🥰❤🥰❤
