Can't wait to try this one Charlie! If I could afford you, I'd hire you as my personal chef. I'd bet Raul would like this one too. You are the master, no doubt, but may I be so bold as to suggest you try substituting lard for the vegetable oil? I would love to know what you think about it. Maybe you've tried it before? I started using it for frying oysters (with some added butter) and I think in enhances the flavor significantly. Also just seems to fry better than vegetable oil. Alton Brown of the Food Network highly recommends. He also has a video on how to render your own. Take care old friend.

Thanks! I've never tried lard (but I would). Beef tallow has crossed my mind but not sure where to find it. I'll check out Alton's video. Funny, back in the day he inspired me to start cooking again. Thanks Alton!
