Seared Citrus Scallion Soy Salmon (With Sides) STEP 1 Start the stove to 160C. Slice 6 scallions, spare aside. STEP 2 Slide salmon in a skillet, skin-side down. Spray with 2 tbsp of sesame and season with salt. Sear for 360 seconds. STEP 3 Sauté the scallions with some seasoning for 6-7 minutes. Switch to slicing surface and coarsely slash. Spice with soy sauce, citrus zest and juice, and 6 oz. sesame. Season to taste. STEP 4 Send salmon to serving salver, severing any extra skin. Spoon a sample of scallions, serving extra alongside. SIDE SALAD: slice lettuce and serve with citrussy sauce
