I have Star Fruit tree next to my yard since I moved to FL 23 years ago. I have been hesitating to eat it due to it having large amount of oxalic acid (or its derivative). So over the years huge amount of frut just dropped to the ground and decomposed. Eat just few over all those years, they sour-sweet some more some less. I will try the dressing recipe for start and go from there. Thanks for sharing.

Hi there! I have Fang Twon and Arkin variety. They are very sweet. Juicing for me for both varieties is the natural way to go for all 5 trees are robust and abundantly fruiting a couple times of year. The more tart varietals are good in chutneys, dressings, smoothies ( I think you would need to add sugar of some sort) and jams would be a natural. As I have read in google scholar.com there are several papers citing kidney problems e/the Starfruit oxacylic acid and different varietals wether sweet or sour.

@@marcieziv Thanks for replying, I appreciate it very much. I do not know what variety is, it grows without any attention from anybody on adjacent lot with a vacant house for over 8 years now. I am going to start my consumption of star fruit slowly incorporating it in some recipies but definitelly in moderation. And salad dressing seems to be a good start.

You should pray you survive if you eat it... Star Fruit contains a neruotoxin called Caramboxin that is dangerous for everyone and fatal to anyone with kidney disease. It's also incredibly high in Oxylates and will cause kidney stoens and other significant health problems. So you might not want to eat this poison
