Ingredients:
• 4 wild salmon fillets (skin-on or skinless)
• 2 tablespoons olive oil (or butter)
• 1/2 tablespoon old bay (garlic & herb)
• 1 teaspoon Himalayan pink salt
• 1 teaspoon lemon pepper
• 1 tablespoon dill (or parsley, thyme, or a mix)
• 1 teaspoon smoked paprika (optional)
• 1 tablespoon fresh lemon juice (for garnish)
• Lemon wedges (for serving)
Instructions:
1. Prep the Salmon:
o Pat the salmon fillets dry with paper towels to remove excess moisture. This helps the fish sear properly.
o Season both sides of the salmon fillets generously with all seasonings listed.
o Zest the lemon and set the zest aside. Then, cut the lemon in half and juice it.
2. Heat the Pan:
o Heat a non-stick skillet or cast-iron pan over medium-high heat. Add the olive oil and herb butter and let it melt, swirling to coat the bottom of the pan evenly.
3. Cook the Salmon:
o Place the salmon fillets in the pan, skin-side down (if using skin-on fillets). Use a spatula to gently press the fillets down for the first few seconds to ensure even contact with the pan.
o Sear the salmon for 4-5 minutes without moving it, allowing the skin to crisp up. If using skinless fillets, just let it sear undisturbed.
o Flip the fillets carefully and cook for another 3-4 minutes on the other side, or until the salmon is cooked through and easily flakes with a fork. Adjust the time depending on the thickness of your fillets.
