Healthy Mixed Vegetable Saagu
Chop some veggies of your choice like beans, carrots, knol khol, potato, tomatoes 🍅, green peas, Keep the mixed chopped veggies aside. For tempering, need mustard seeds, curry leaves, red chillies, tumeric powder, asafoetida
Take a pan, pour 2 table spoons of groundnut oil, add in mustard seeds, add in bengal gram, add in curry leaves , add in red chillies add tumeric powder, add asafoetida and fry it for a second & then add all the chopped veggies into the pan and mix well ,then add some curry leaves & tumeric powder if required, add in spoon of salt for veggies, fry the veggies for a little while and pour required water to boiling the veggies, close the lid of a pan and let it cook for sometime, stir it in between
Mean while, for grinding the masala,
a hand full of fried gram, cinnamon, poppy seeds, cumin seeds, coriander leaves green chillies, a spoon of salt & freshly grated coconut 🥥 . Then, grind it into a fine paste , & saagu masala paste is ready to use
And check if veggies are boiled for 50 - 75%, then add in grinded masala paste into the pan and add some water, let it simmer for a little while, let it thicken a bit and come to a nice boil and switch off the gas stove.
Healthy Mixed Vegetable Saagu is ready to serve with Poori or Chapati
