Hi I really love your channel. Right now , my husband, my 4 dogs.. (2 very old pit bulls and 2 small jack Russels.. who r all very well trained and obedient) and I are living in a hotel room while he is working out of state putting up giant power lines in carpinteria.ca. we still have our house in vegas..But we rarely go home. I really missed cooking because we have no kitchen at the hotel... we have a small refrigerator and a microwave. So after watching u and your husband, we went and got an Instantpot and a small George foreman grill. I can make any meal with these 2 kitchen tools. And we are also looking at sprinters! Thank u for sharing and inspiring !

I have a recipe you may enjoy. 1cup chopped raw kale + 1/2 cup shredded carrots + 1/2 cup red cabbage ( or beets) + 1chopped avocado + 1/4 cup sunflower seeds + 1/4cup pumpkin seeds. Toss with juice of 1 lemon or lime & 1T Dijon mustard & 2Tolive oil. Serve over a hot baked sweet potato. The flavors really blend well

I do not live in an RV but I do use my instant pot. I've owned it for 3 years. Quality construction and easy clean up. Nothing sticks to the stainless steel inner pot and it still works like new! It is my go to kitchen appliance. Once ever other week I use the oven for baked chicken wings. Your quinoa stew looks awesome! Great job!

My favorite cooking gadget is my Instant Pot too! Love, love, love it. As I'm writing this I am having some pea soup made in the IP, and it is delicious. I make all my veggies in my IP, potatoes, sweet potatoes, carrots, kale, collards, and I usually only put them on to cook for 2 minutes. I do however, dice potatoes/sweet potatoes, carrots into a big dice, and throw in some frozen beans, all cooked at the same time, works great! Vegetable soups are great too, I have cut my meats way down, I may have it once or twice a week, but mainly try to stick to plant base meals, and I too have lost 40lbs., feel much better too!

My wife and I have a 28 cup GSI stove top Coffee percolator . We make a full pot every morning , fill our travel mugs and moning coffee cups , and then we put the rest in a 2L Stanley Thermos so we have fresh coffee throughout the day . This way we only have to use energy once a day to make coffee . We plan on doing this on the road too .

If you rub the eggs with mineral oil, you don't have to refrigerate them Nobody in Europe refrigerates eggs, but that's because they're not washed and therefor have a protective waxy coating. Eggs in the US are washed, thus removing the coating and allowing bacteria to penetrate the egg. So coat them with oil and you're good for a few weeks, or find local farms along the way who sell you eggs right from the chicken without treating them. Keep in mind, neither refrigerating nor coating the eggs helps when you got an egg that's infected with salmonella. That happens INSIDE the chicken before the shell forms. Europeans vaccinate their chickens, so they don't have the problem. In the US you should fully cook eggs unless you know where they come from. Pastured eggs should be ok. Usually the entire salmonella thing comes from mass farming chickens in tight quarters.

Uwe Schroeder I used to get my eggs from the Amish or a friend who had chickens. Neither needed to be refrigerated. You are right. I now get them from the store since I moved and will try the mineral oil. Thank you.

Joe, you share the coffee passion with my husband, Uli! Have you ever tried roasting your own beans? Uli has a little coffee roaster from Sweet Maria’s Coffee in Cali. And Sweet Maria’s offers amazing beans from around the world! He’s been roasting for two years now and I don’t think he’ll ever go back to store bought, no matter how fresh,. Also, he is seriously thinking of taking our Jura Impressa Z6 coffee maker on the road with us. It’s kind of a space hog, but at least one of us can’t imagine a morning without it. I’m just as happy with our Aerobie Coffee Press or a French press. Anyway, I just joined your family on Patreon, so I look forward to following you all. Hugs to Leo. I understand he has a health condition. We understand the anxiety and concern of having pets. We lost our 10 year old GSD to hemangiosarcoma on December 7th. On Tuesday we welcomed a new member into the family...a sweet little Schipperke girl who will hit the road with us in our Cougar 5th wheel, when Uli finishes with chemo in (hopefully) April. Happy and Safe Trails To You!

Your can opener is called a P-38 & was invented in 1942. It was issued to the Military so they could open their K-rations & supposedly it took 38 slices to open the can - hence the name. My new trailer will have a 6 cu. ft fridge with a separate freezer which might be overkill for a single guy. I buy a lot of microwaveable meals & occasionally some of them are actually healthy - like the steamable ones. I'm also buying a mini Instant Pot. You converted me!

God bless you. I am old enough to be your mom and I was raised on a farm, raised our own food including meat and cooked on a wood burning stove. I loved cooking, until now. My RV life would be vacations touring the USA and Canada with taking in mom and pop old time diners at least a couple times a week and my budget would be set for that. I do enjoy watching you use the instant pot and have checked Into it for the few times I have to cook and have been encouraged. Otherwise salads and select veggies for me. Quinoa and grains kill me. Would love to see Joe cook! Sorry for the length, but Joe just described, except quinoa, how I eat now.

Loving your content! I know this video is a couple of years old now. If you're looking to save room for a coffee grinder, I use a power drill (Makita XPH12) with my hand-crank burr grinder. You should probably have a cordless drill now that you have the FWC flatbed (offroad repairs) and the JavaPresse manual conical burr grinder is the size of a medium peppermill. The multi-purpose drill with the JavaPresse might save y'all a bunch of space.
