Jalebi is a crispy juicy delicacy made by doodling color and flavoured Bajra batter in ghee and dunking it in jaggery syrup. Jalebi being an Indian traditional desert is often made during special occasions. jilebi is a must try at home for its taste and to make moments a celebration.
cover the inside of a glass ziplock and fill it with batter.
Make sure no air bubbles are formed by drawing concentric circles on the batter with a spoon or ladle.
Now pour ghee in a flat heavy bottomed pan for frying, if using oil then it is suggested to add one or two tablespoon of ghee into the oil as it enhances is the flavor. While ghee is heating up, add baking soda to the batter and give a gentle mix, then add a few drops of batter into it and the batter should rise immediately without sticking and changing colour. Now the ghee temperature is perfect for frying jalebis.
Now pour batter into ghee in small concentric circles and let it fry. Once the jalebis turn golden brown on one side turn it over and let it fry till slightly Golden and crisp.
once it's deeply fried, drain excess ghee and
immediately add it to the jaggery syrup. Dip it for a few seconds and then with the help of fork dunk it in jaggery syrup. let it sit for a few seconds. Ensure that the syrup is not warm as adding jalebies to very hot syrup will turn them soft. As the jaggery syrup is evenly coated, remove it from the syrup bowl and set it on a plate.
Now the delicious and flavour rich jalebis are ready to savour.
You can also store it in an air tight container for later use.
This is a perfect snack for diabetic patients as it also quenches the sweet tooth while keeping them healthy.
