What am I missing? How does he have Hunter cards in his starting deck as a priest?

The new expansion brings a new keyword Tourist, which allows classes to pick cards from their Touristing class from that expansion. In this case, priest has the hunter tourist, which gives it access to this expansion's hunter cards (except for their tourist)

Maybe I’m an idiot, but I still don’t see the benefit of the 1/2 you shuffle back into your deck. I’m getting a bit senile.

It holds any buffs when shuffled back in, which has some synergies with things like Chillin' Vol'jin and Bronze Gatekeeper Magnetizes. But it does indeed still feel like a weak link to the deck overall since none of the 1-drops have much shared synergy cards beyond being pulled by the Fishing Rod and Bronze Gatekeeper being able to Magnetize onto two of them.
