We will show you how to debone a chicken, and four different ways to can it: bone-in raw pack canning, bone-out raw pack canning, canning pre-cooked shredded chicken, and canning bone broth, made with all the chicken carcass leftovers. Canning meat may seem intimidating, but it's actually very easy! Canned chicken is our go-to way to store chicken for the year, because it doesn't take up precious freezer space. Plus we love the flavor of the finished product!

Instead of feeding your bones to the dogs, use ALL of them to make bone broth, then put the bones on a cookie sheet in the oven on 300 degrees for a couple of hours (until you can break leg bone by hand) then run them through the blender to make bone meal. Bone meal is more expensive than dog food, so you can save some money.

Well the expensive electricity would prevent me from doing so why not just give the bones to the dogs and what they don’t chew and leave on the ground 😮 how about I then produce those into Bone meal Over a Wood fire and process for Future garden use (roses love it) be well and your day and may there be fertilizer for all of us again someday

My husband and I are vegans, but we have a number of rescue dogs who enjoy meat (as most dogs do, of course). I cook for my dogs every day because I do not think commercial dog food is good for them and prefer to give them the benefit of fresh produce from our gardens as well as meat that we buy. I have found it is easier for me to cook 20 lbs. or more of chicken at one time than to do it in small batches, so I have been doing that and storing it in the freezer. It occurred to me that with freezer space at a premium, canning it might be an option. This video has been really helpful for me. One thing I would say though, is don't toss those bones! I cook down all the bones in my pressure cooker until they are pretty much mush--along with odd bits of chicken and broth ,plus any vegetables that are handy--then blend them into a paste in the food processor. This makes a nutritious additive to the stews or rice that I cook for the dogs and they LOVE it. I don't like knowing that any animal is killed for food, but I don't believe in forcing dogs to be vegetarians either! At least this way, I know they are getting good food and nothing is wasted.

I canned raw chkn about 3 years ago. Well I feel it’s time I use up these canned jars of chkn. I’m going to make great big bunch of chkn tamales and start over again with fresh chkns.

Wide mouth jars would've come in handy. Skinless, raw packed bone in chicken, also known as "ugly chicken" is absolutely the best tasting chicken I've ever had. Will always do it this way. The bone broth we made from it was phenomenal as well. Thank You, Happy Thanksgiving!

That center cartilage in the breast is called the keel. I have been deboning my whole chickens for at least 45 years even for making fried chicken. It was easier for my children to eat AND I kinda fooled my kids on if it was dark or light meat…not that they ever noticed…lol. I am loving your video.

I've canned for over 50 years. Until recently I've hot packed deboned chicken. Now I love bone in canning for that incredible broth. I take the skin off and freeze it to fry later for chips. I don't fill the jars all the way with chicken and do add water for the broth. If I'm canning a whole bird I can put in a split breast, thigh, leg and wing in a quart jar, but will do maybe 2 legs and a thigh with water for the bone broth. Actually...if possible...I freeze the wings for hot wings later, my FAVORITE.

On canning chicken I agree with you on the cooking the chicken and deboning the chicken before canning. Jars and jar space is important for me and the bone in canning seems to me like a waste. This is also the reason why I hot pack can even my fruit and vegetables. When I have raw packed them it seems like I waste a bunch of the jar space

On average, what do you think each chicken weighs? I love canned chicken. Best flavor and versatility. I do skinless/boneless brests but feel this method is not efficient nor sound practice. I think from now on, I will get the whole birds, bone out at home, then do raw pack use the bones for stock and render the skin for schmaltz. I will also try roasted shredded as well. Can you recommend a good boning knife? Kris in Orlando

I don't raise chickens, so I have to buy it. I have raw packed (my favorite method) some leg quarters bone-in skin-on as well as bscb, cut into chunks. I prefer the bscb because, of course, there is more meat per jar. But the quarters produce a more flavorful broth. I have also combined boneless skinless white and dark meat and use that for soups and casseroles. The white meat makes the best chicken salad! Do you de-bubble after adding the water? Also, do you let the broth cool and skim the fat off the top before processing? Your broth is beautiful! Thank you for sharing how you process your chickens. It is truly a group effort!

Did I miss the part of getting the air out of jars of chicken before capping? And don't forget to add 3 tablespoons of vinegar to the canner water.

Thank you for such an in-depth video on all the options for canning chicken. One question…the chicken that you pre-cook and shred, then pressure can, is it moist or dried out from all the cooking time? I have only canned chicken once (raw pack breasts), and the end result seemed too dry. I appreciate all the helpful things that you and your family share!

Chicken bones are not safe to feed to dogs. They splinter and can puncture their insides. We lost one of our dogs that accidentally got ahold of a piece of chicken. He became septic do to the puncture. We have never fed our dogs chicken bones. Any other bones are not s bad. Just my experience. Watching you guys break down the bird makes it look so easy. Lol I hate cutting up chicken.

Cooked bones are definitely dangerous for dogs. Raw bones are much safer.

when you have a family like yours that are so big you have to cook it cool it descan debone and tear it a tear it or cut it up that's a lot of work it's easier to put the bone in and if you have to use three jars or four jars or you could get the bigger jars they're half gallon plus a quart so they're big jars and you can put a whole bird in there at that time

Since Annie just hearted your question, I can respond and tell you that I have been canning chicken since 2013. We use our raw packed chicken in many dishes. Chicken tacos, chicken and rice, southwest chicken egg rolls, Asian cuisine, shredded chicken for nachos. I also add the chicken to pasta dishes or casseroles for our protein. I learned how to pressure can from watching KZbin videos of the great seasoned canners who have canned their whole lives. It’s like learning from your mom or grandma. I never add additional seasoning because that way I can use that jar for any dish I like and season at meal time. I have heard the seasoning can be overwhelming after going through the canning process. Or that it may turn bitter or burnt tasting. You could try adding seasoning to one jar when you process that way you can try it before impacting the entire batch.

Hello, we only add a little bit of salt so the chicken or any meat can be used with any dish. We do have a bunch of recipes that we use canned chicken with posted under our recipes playlist. We make casseroles, chicken and vegetables, sandwiches and much more. Blessings!

Use it for anything that you would ordinarily need chicken. Chicken salad, casseroles, soup, chicken chili, enchiladas, BBQ sandwiches, chicken and dumpling, pot pie.

Because it is smoked, it is often too dry to can that way. You need some liquid to create the proper amount of pressure inside the jar...Loosely pack the meat, then add liquid to fill the jar at least 1/4 full. This is often enough liquid.

Yes, we are at 600 ft. However, just for reference pressure canning requires higher pressure and longer times at Higher elevations. So lower elevations should cause any problems regardless. Blessings, thank you for your support, and have a great day!

Do you think an Electric/digital Pressure canner is worth it? I would totally can meat but hesitate doing it beacuase of having to "babysit" the traditional pressure canner for such a long period of time.

I debone the breast and the legs in the thighs do I remove all the bones it's just a big piece of meat when I'm done

I always start at the top of the breast and cut through one side of that breastbone and then I can slice down to the cartilage on that seems to be an easier way for me but I take the Wings off first everybody's different I guess

I love seeing all the different ways of doing the chickens. According to the National Center for Home Food Preservation guidelines for canning bone-in chicken it is 65 minutes for pints and 75 minutes for quarts. Also headspace for chicken is 1 1/4 inches.

I totally agree with you about the cooked chicken being the best way to can it up. I can make chicken salad with it, I take it and make a chicken, broccoli, rice and cheese casserole all the time! I don't raise chickens, but every time the store has them on sale, I get several and cook them up, then take the bones and save for broth. Many times, I take the broth that is made when I cook the chicken, and I put that over the chicken instead of water. Instead of banging your jars down once you put the water in them, do you not use a de-bubbler?

Another thing, since you are adding liquid, start with 1/2 of water or broth in the bottom of the jar. That way it will migrate upwards as you are adding chicken and taking up the air spaces. You'll still have to add some water anyway so it's not like that 1/2 cup is taking the place of chicken.

When I open a jar of my canned chicken it smells like I'm opening a can of tuna! When I do mine I hot pack them but use broth. But then I have others say if it's smelling like tuna I'm doing something wrong!?! But every thing else turns out beautiful! Is it because I'm using broth instead of water? I pressure can for 90 mins at my altitude I have to pressure can mine at 11lbs but usually it stays steady around 13lbs. I want to know why mine smells like tuna but others saying something is wrong if that's the case! 😢

Supposedly it's not approved, but for those of us who can't raise birds Sam's and Costco rotisserie chickens are a great economical source of cooked chicken to can! I'll also cook and debone 10lb bags chicken leg quarters and add some cooked breast breast to the mix too!

I canned a lot of chicken with the bone on. The flavor was great but it was so hard to get out of the jar. I do love canning the breast and meat without the bone better. I haven't tried the shredded chicken yet , however, I do want to try that now.

Nice video. I've been using and All American 930 stove top canner for years. I love it so much that when I saw a stripped down AA 941 at a yard sale for $5 I grabbed it and spent about $50 to get it usable. And it's just the 2 of us most of the time! You've showed how to do it in a very easy straight forward way.

This was SUPER helpful for me! I have some whole chickens and whole turkeys in the freezer that I want to can up. I raw pack boneless skinless all the time but was trying to figure out the easiest way to prep and can the whole birds. Never thought of cooking in the pressure cooker and then shredding. Absolutely trying that with these ASAP! Thanks so much, really this was great! I loved your process and I even hit the like button to make sure it is saved, and I hardly ever do that lol.

Have been pressure canning chicken since 2020 when I bought my first PC. Have done a mix of raw pack bone in, chunked, skinless and boneless as well as cooked shredded. Nice thing about the cooked and shredded is the jars of broth that are also canned. Just processed 60 lbs leg quarters from some good deals at a local grocer over 3 canning sessions, all cooked and pulled from the bones. But my game changer this time was a $6 gravy fat separator from Ace hardware! It's only 1 cup but to take the extra bit of time to separate the fat in both the shredded meat jars and then the broth paid back double! Beautiful jars with no big fat cap. But nothing wasted....I poured the fat off into its own jar and it's refrigerated for cooking. Chicken fat is the secret ingredient for hot dogs here in Central NY at a popular local joint that's been around since the 50's. So I now have dozens of jars of chicken, broth and a big jar of good cooking fat. Best $6 I've spent this year!

I’m a new canner and the USDA Complete Guide to Home Canning Book on page 5-5 says 1 1/4 inch headspace. (They changed it from 1 inch). It’s great to see you both working together.

Another thing to add to your bones for broth is your chicken feet and the wing tips they are very high in collagen, and that's good for your bones and joints I grew up my grandparents did this

I'm a new subscriber and I really love your channel. However I looked it up and you're not supposed to give chicken bones to your dogs. It says they can splinter in their throats and all that. Just wanted to let you know in case you didnt

You are correct! You are not supposed to give cooked chicken bones to your dog. We either give raw chicken to our dogs which do not splinter, that's how they would normally eat raw food. And if it's something that we've already cooked and processed we pressure cook it from multiple hours and then puree it in our blender to turn it into a bone meal that no longer has any splinters in it. Both of these variations are completely safe for our dogs and we've never had a problem with it. We would most certainly advise caution when it comes to feeding your dogs any type of cooked bones though that are still intact. Thank you so much for your support! I’m still in my first year of pressure canning meats. But after 7 or 8 batches of raw and pulled meat canning chicken, I have found I prefer raw pack with bone in, so that my broth in with the meat is bone broth. And I roast the leftover carcass and cook it with onion and herbs to make a quart or so per bird of overnight bone broth to pressure can the next day. I cook or air fry the skins separately and make schmaltz (rendered chicken fat) to put into a jar in the fridge for later cooking. So delicious!

Cooked up with onions, herbs, and a small amount of carrot, it is no longer called broth, it is stock... Delicious-ness in a jar!

PS use large mouth jars for canning chicken it's so much easier. You don't need a funnel for packing chicken you just need to wash the top of the jar when you're done.

Yes it is fully cooked. It is good for a minimum of a year but it lasts much longer than that.

I love your method of canning whole chickens.. with the skin on, does that create too much grease where youve had seal failures? I skin and debone my chicken thighs and make a shawarma spice up and can them up. I do add some water to these before canning..

Take the chicken skin and deep- fry the skin, makes for a nice snack like pork rines / crackings,

Really enjoyed this one and so timely as we were just getting ready to can chicken for the first time. The whole process couldn't have been easier with the Presto Pressure canner. The only problem we had was with the head space of which we were being very conscious. After the jars had set for a few days we noticed the fat cap first which we didn't know about and some chicken stuck up above that then got a little funky. There was only one of eight that was really noticeable. So we opened that one first and threw it out. Any advice would be great. Thanks and keep up the great videos.

I was always told that chicken bones can splinter and hurt your dogs. So we don't feed any chicken bones to pets.

Cooked chicken bones are NOat good for dogs. Raw bones are digestible for the dogs. We give raw bones to our dogs but not the cooked ones.

I have two daughters are veterinarians and as per both never never never feed bones to our dogs. We've seen to many doggies needing major surgeries from bones lodging into their intestines and throats, cooked or raw !! Once you've boiled down the bones for hours to softened you can then bake in oven for a few more hrs at 350*F until softened and dried more to the point that they can go into a blender to be grounded into powder ...

I gave my lab many years ago raw ckn bones, and he ended up going to our neighbors house. He killed some of the mans chickens. Not a good idea. Always give your pups cooked chicken.

Large mouth jars might make it easier to raw pack with bone in. Definitely easier to get it out, too.

Instead of water could you use that that broth instead of using Straight water wouldn't that give your chicken more flavor
