I save the card board tube from a paper towel roll to store my tongs in. It keeps them from tangling with other utensils.

Nice tip! I just might try that. I have a tip to offer and return that you may want to try as well. Go buy a small keychain ring from your local hardware store (mine was a whole whopping 35¢) and attach that to the end of your whisk. It speeds up whisking time _INCREDIBLY!_ Why it does this and is so helpful, you would have to ask a physicist or something, but believe me that it really _DOES_ work! I learned it as a tip from a different video on a different channel, and it was amazing to see how much it sped up the time for them to whisk egg whites into meringue and cream into whip cream!

My clear one went into the garden last summer as an emergency bird bath and there it's stayed 😁 I have some opaque, vintage decorative ones but I tend to use them as serving dishes now. My clear, smaller round ones with lids are invaluable for the microwave.

Cut a notch in the drawer front, screw the cut out part to the cabinet so the notch is not noticeable but the drawer is useable. A replacement drawer front purchased and placed in the bottom of the drawer for when the stove is replaced or you move house! Of course that drawer can easily be accessed with the oven door open!

Bravo, Helena 👏👍 Very useful and honest review . Your personality shines for your are advising people while caring about their wallets and precious kitchen space . (Some other cooks often tend to push people toward buying things that unnecessary). You are such a sweetheart, truly 😍❤️.... And it was a pleasure to watch since ...my drawers are organized in the same way, I too have a problem with opening one 😂, and I use many of the tools u do (in some instances exactly the same !!!!))))))). You are right about pastry brush !!!!!! When I’m making pirozhki according to your recipe (and, OMG ! they are fantastic !!! I ve never baked pirozhki before but by following your instruction had a success to the point of “Its the best pirozhki I ever tasted!” - coming from a guests ! Thank you !) , so when I’m making them I noticed that my regular silicone brushes are too hard for the dough surface and unearthed an old pastry brush , now this works perfectly!!! 👍👍🙌🙌. Still I ll look into some links u posted for some of the things u use are definitely on my wish list and I came to trust your advice and expertise 🙏🙏👌👌💕 Stay safe , dear Helen 🤗🤗❤️

I feel like tongs are such an underrated kitchen utensil. Edit: also it would look terrible but I would chop out a chunk of the drawer so I could open it lol.

I thought I would add my comment here since this video is older and no one else would likely see it otherwise (this thread is at the top atm). I have an excellent tip for a kitchen tool that she recommended here. This was the comment I just posted about it in the main comment section to Helen: __________________ If I may be so humble to offer a tip to an experienced chef… This might be something you haven’t heard of before, but I came across this tip in a video and I found it to be _SUPER_ helpful for a kitchen tool! The tip is to go buy a small keychain ring from your local hardware store and attach that to the end of your whisk. It speeds up whisking time _INCREDIBLY!_ Why it does this and is so helpful, you would have to ask a physicist or something, but believe me that it really _DOES_ work! P.S. 06:55 How on earth would that tool core an apple/pear?! Lol. It’s not a cylindrical shape.

The wooden wedge spatula is my favorite too! I have the same knives but I have one more favorite, a round edge cleaver from Turkey. You can rock it quickly through piles of herbs for chopping, and it’s also great when chopping onions

Great list, remarkably similar to what I use. A good solid Wok is something I would add to your list. I use it as it is traditional in asian cooking, but also use it to roast veggies with the help of a torch ( a plumbers torch). Invaluable!

I thoroughly regret buying a small house years ago. My kitchen is microscopic. Here is my plan for the retirement home I hope to buy someday. 1) Must have huge kitchen. 2) Must have huge garage. 3) Buy the best vacuum cleaner I can afford. Never buy a piece of furniture in won't fit under. Never buy more furniture than it can fit between. 4) Don't go broke so I can afford a weekly cleaning person.

Helen, I just started watching cooking videos this month and found your VERY helpful. I've been cooking 50 years, so have experience and some techniques down. One chef, Jean Pierre Brehier, teaches to use the microplain with the chanel portion up, rubbing it across the produce. This enables use to see what he is doing better and catch the zest in the channel then put desired amount in dish. Also, Your knife and tools teaching is so very wonderful. I am a farm-wife with no specialty shops around but you cover many things with the science/nutrition to help us with our specialty diets. Thank you sooo much.

We used the Kitchen Aid pro in culinary school. It’s a great mixer. I bought a Kitchen Aid mixer but no the pro. I got the next size down. It works great for what I do. Plus it takes the same attachments.

I'm happy such. a good cook is not afraid to show off the Viictorinox. They are good knives--if you keep them sharp. They are nice knives--been aa game changer over the silly knives I used to have. Nice video--very practical and sensible.

About your middle drawer. A drawer is just a box with a decorative front/face on it. Simply cut the top 2” off the ‘face’ of the drawer and you can use it. Actually you could just cut the top corner off because the sides of the drawer are low enough not to interfere with the oven handle.

Thank you Helen! Now maybe I can share a tip with you! Our cabinet maker solved the “door bumping the oven handle” by modifying the drawer to open at angle! I’ll try to upload a picture.

Our kitchen overlap is more than 90%. I have stainless steel wire shelving since my kitchen (and thus in-kitchen storage space) is small. I discovered that the shelf grates are perfect for the vertical storage of lids, along with spatter screens. What you don't have that I love? Roux whisk (flat). Various funnels and canning tools. What you have that I covet (besides the $$$ Vitamix)? Stand mixer (also $$) though I can't think of an attachment I need.

True enough. My husband and I are both enthusiaastic - and sufficiently accomplished cooks. At home, we have minimal equipment, kept handy, and each used for multiple purposes. Cooking at home is usually time dependent. My husband and I both work long hours every day, including weekends. Our two teenage boys are busy with school and school work from 6:30 in the morning until 10:30 at night. They both like to cook, but realistically, they barely have time to eat, let alone fuss with cooking. However, like many cooks we accummulate all sorts of equipment snd gadgets. My mother and grandmothers were the same. All ghis surplus equipment finds its way to our summer lake house. There, we have time to discover wholly new cuisines, experiment with new types of food, practice tricky new cooking techniques, and soending the effort to make elaborate time-consuming recipes that we wouldn't dream of trying to take on at home -- such as bake an elaborate 8 layer filled cake with a mirror glaze and piped decorations; brew homemade strawberry-dandelion wine, or can 1000-ingredient, 25-step Native American preserved wild game chutneys -- simply because we don't have the time. This is something we all love to do and look forward each summer for the opportunity to do so. So for 2 months every summer and 1 month around Christmas, while we are on vacation at our lake house and the family is all around and at leisure without jobs to rush to, or school schedules to abide by, we find that we spend a lot of time -- probably 50% of every day -- scanning our large collection of cookbooks (that also have, over the years, magically migrated to our lake house,) creating interesting menus, shopping for food in local markets, cooking, baking, and enjoying long leisurely dinners. This is when we find joy in having a cupboard full of single-use cooking equipment accumulated over 3, going on 4, generations. We always rediscover some tool we had forgotten about and have fun relearning how to use it. It's like opening Santa's sack over and over again. I'm so glad we have saved all those tools, each of which carries some family memory, even if many are not essential by any means and are used maybe only once or twice a year!

I love this--you nailed all my neurosis!! I live in a city apartment and want to keep it Zen--I anguish over the utility of every implement and where it is stored vs its proximity (presently debating a pasta machine). I would add to the workhorse list: 6 sizes of silicon spatulas!!

I loved my 1980’s KitchenAid food processor until it died after many years. I replaced it with the Cuisinart 14cup. Still miss my KitchenAid.

I just have a little tip for one people use sous vide . One I noticed you use Ziploc bags and fasten it to the side of the water Bath. I do it a little differently I am lucky enough to own a chambered vac sealer however you can get a countertop one for a lot less money but when you put the protein into a vac sealed bag you can put in the herbs or marinades or rub, it infuses into the protein a lot better. There is also no chance of water getting in. I also put something across the bath long skewers or a long handled wooden spoon and fasten the bags to it with a peg. This way the protein is not up against the wall of the water bath it is surrounded on all sides freely which I think produces better results. Oh of course if it’s vacuum sealed you don’t have to do this you could just drop it straight in but I like to do this, I just have it in my mind it gives the best results.

I have a high-speed blender that is BETTER than the Vitamix! It’s the Froothie Optimum. It has more blades, is more powerful, and cheaper. I bought the long spatula from Vitamix, for getting stuff out from the bottom of the jug and under the blade (essential in my view, to save a lot of waste). I also have a Ninja Foodi rather than an Instant Pot. This machine will air-fry, slow-cook, pressure cook. Fabulous machine! Other electric machines I have are the Soyabella soy milk maker (fabulous), Veggie Bullet with small blender attachment. This machine will shred and slice at extremely high speed, and spiralise. The blender attachment turns it into a NutriBullet - useful for making small quantities of thicker stuff like guacamole. I also have an old Kenwood Chef stand mixer (a workhorse, still going strong after 25 years plus) and an electric bread maker for our regular seeded whole grain bread. I have most of the other stuff you list. You do great videos!

love this video, i was running out of room in my kitchen cabinets and you inspired me to clean them out. amazing how much crap I had that I almost never used. ex: had 4 different sizes of measuring cups, got rid of three kept the small 1-cup measurement, its the only one I always use, the 4-cup was big and heavy, I always just use the smallest just measure it 4 times if i need 4 cups. than I came across a box of attachments for a hand held sort of an emersion blender that broke 2 years ago and they don't fit my new one. I was amazed how much crap I was hoarding and never using. Also came across a stand holder at IKEA that allows you to store plates vertically, I stack my plates from largest to smallest to save room, yet always use the larger plates, headache solved for both pulling and replacing clean plates to their place. BTW are you really one of the few people who does not have a junk drawer in your kitchen? I really reduced mine, old pens that don't work, useless old receipts, match books with 2 or three matches left, screws and screwdrivers I forgot I even had in there, rubber bands that come on some produce but so old they snap. I gained a new drawer in my kitchen, and boy I copied your idea, got a bunch of baskets at the dollar store, lined my drawers with them and everything is organized no more digging through the drawer and poking my fingers on sharp crap in them. Ohh and for my knives I got a magnetic bar, the wooden knife blocks look nice on the counter, but I usually use the knife give it a wash, swipe it on my apron and replace it, ugh wood knife blocks become a nightmare if you don't make sure the knife is 100% dry before you flop it back in there. Not to mention a lot of the time when I cut stuff like vegetables I just wipe the knife on my apron and throw it back in there.

Very similar toolset to mine and have learned to replace, not to add. I also have some things that are 50:50 useful:sentimental but I'm only human! (Incidentally, I use a stick immersion blender to knock up mayo. Tall container, all ingredients in - including oil - and whizz, drawing up the blender through the mixture as it emulsifies.)

it looks like that middle drawer can be fixed by routing a cutout in the just the face panel. i would totally do that instead of having to open the oven first every time.

I quite agree; I would take that entire side off about 2 inches in by a cabinetry pro that would leave it looking as if it belonged like that.

The best part of this video ids the emphasis on the “why.” For me, never had a juicer, never expect to. Was given an immersion blender, and I keep it, even though i use it 1-2 times a year, and wouldn’t miss it. OTOH, I strongly suspect that the list of things I use daily are shared by Ms. Rennie, and probably other viewers.

Sometimes it's definitely worth thinking "what do I already own that could perhaps do this job?" - or when buying something for a specific task, "what else might I be able to use this for?"... Single-purpose utensils are often such a waste of space. In my small kitchen I need EVERYTHING to be able to do at least a few jobs. Also: You didn't mention silicone baking sheets... They can be a great replacement for sheets of baking paper, and can be used over and over again and are very easy to clean. I have one that I use for absolutely everything, and once a year when I do the large batches of Christmas biscuits/cookies I splurge on some baking paper - because when you're doing 1200 biscuits/cookies you really don't want to have to wash the silicone sheet between each tray being baked...

You are so right. I think of my kitchen the way I think of my wardrobe: I don't like to buy anything that is only going to be worn once. Unless you yearn to make hollow pasta frequently, a dedicated pasta machine is a waste of space. When I had my big house, I had an extruding attachment for my Cuisinart, but I didn't really ever use it that much. You can use your existing mixer or processor for the dough (though hands are just great), and a nice classic little pasta roller is the best bet. You can even roll it out by hand, but if you want a really silky texture, thin and even, the little machine is best, and it doesn't take up much space. Also, when I bake a lot of cookies, I reuse the two sheets rather than put fresh paper on each panful. (And if you have a garden, that paper can be torn up and composted.)

A few years ago my bf bought me my first (and still to this day) my _ONLY_ two real knives for X-mas: A Victorinox chef’s knife and paring knife, along with a cheapy knife sharpener. That’s all I have ever needed to cut anything, besides an old cheap bread knife I’ve had for many years that I don’t use often (I am a vegetarian so dark it’s a fillet knife). While the cheapy sharpener has indeed some chips on my chef’s knife, which isn’t the knife’s fault of course (and I find I’ve had to sharpen them more often than I used to), they have been amazing knives! I still never got myself a honer (however you spell it), so that might be part of the problem too. My bf was so thoughtful though that along with giving me those knives, he gifted me a massive box of assorted Band-Aids, and you’re damn right that I went through most of them because I’ve never had practice with legitimate sharp knives in my life… and I _STILL_ cut myself with them LOL.

I was super excited to see that I have every tool you showed except a kitchenaide mixer. But I’m not a baker and that’s always what I felt they are most used for. I even store my pot lids like you. I very much dislike single use tools or appliances, but have fallen victim to buying them occasionally and regretted it 😂.

If I had that middle drawer I would use it for rarely used items that most likely could be accesses by just opening the oven door and pulling the drawer out. Or if that would not work I would instal an open shelf to its space. Houses so often do not have enough storage space so I would use any possible space.

I would add an oyster knife, even if you never need to shuck oysters. It is wonderful for opening boxes and opening things where a finger nail wouldn't work. (like the foil wrap on the whiskey I buy)

£60 - yikes. they are quite cheap in the US. yes, the specifics of this video (like brands) are geared towards American cooks. I bet if you went to a restaurant supply store in the UK, you'd find some other brand of tongs that would work just as well.

I was going to recommend the iSi Slim Silicon Spatula; it fits *perfectly* between the blade post and side of the vessel to scrape the bottom of the Vitamix. Unfortunately, it looks like they don’t make it anymore. 😔.

Vitamix makes an underblade scraper for their blenders Alternatively the norepro last drop spatula looks similar and you could also use that

A sous vide tip for everyone, I don't own a thermometer (I cook all my meats in the sous vide) so when I bake bread I set my sous vide to exactly the temperature water required for the yeast, perfect everytime! Edit: Also really great for low-slow oil infusions! Hot Chili Oils, Rosemary Olive Oil, etc

I live in a NYC apartment with a small kitchen and thus limited by counter and drawer space. No mixer, vitamix, slow cooker. Barely have room for a toaster oven. I have a small blender in a cabinet. However, I do have many of the basics mentioned here and still manage to cook meals and bake simple things.

Ha! I have to open my oven to open one of my drawers too! I also have to close the dishwasher to open the under-sink cabinet to get to the dishwashing gels. I have a small galley kitchen so space was at a minimum.

AH yes, I did watch this. I was still living on the road in my camper and forgot about it. I'm glad I re-watched it because it reminded me of a few things. OH, I see in the suggestions you reviewed your KitchenAid Pro!! I gotta watch that. :-D That was a tool that is high on my list to get.

Microplane tip: put the item being planed underneath. Less mess - zest ends up in the channel on top, and you can see how much you've grated.

I can't believe you do not have a pasta pan. I know you can do without it but it can be used as a soup pan to :) I do agree on your less is more idea and good to see a scale being promoted over using size measurements

I dont use my dish washer so it stores all my lids to my pans. I have a lot because i have a large family and we are always cooking. It makes looking for the lids so easy guess in the future I'll install cabinets that pull outwards.

Don't get me going on rolling pins, I have one to roll out my tortilla dough / dumplings, I have one for cookies, and one for pies. I have about 7 whisks. I have a ricer, but only use that for hash browns. I have my big food processor and a small food processor. I have 3 Crock pots, one for stews, one just for my beans, and a small one for dips. Bought the instant pot to make tamales. Bought my brother an air fryer, but then he wanted a larger one so got him a larger one. We had a food saver, but my brother wanted a larger one so bought him the larger one and he gave the first one to a friend. I definitely need to go through my drawers and get rid of some tools........... have way to many. I have bilateral carpal tunnel syndrome, I also have arthritis, and I fractured my right shoulder in four places a year ago ( of course I'm right handed ) and that made my right arm / hand weaker than my left, so I'd like to get an electric juicer. I just found your site, but I'm subbing !

I've got a long tapered pin for my bigger projects, but I also love my 10" dumpling pin. I use that for anything that's in the "small stuffed pocket" class of goodies, so I'm not re-rolling trimmings and over-handling the dough.

I would remove the long oven handle from the front and replace it with a short one in the center. Yes, you lose a spot for the dish towel, but the drawers will work just fine. Just a suggestion for a friend.

An intriguing and educational video as always. I feel like you may have under sold sous vide immersion circulators to the lacto/ovo demographic, since they make onsen tamago the easiest insanely impressive egg preparation that you can pull off.

I've seen enough students struggle to get sous-vide eggs out of their shells in my classes to change my mind about them. also not everyone likes sous-vide egg white. I much prefer my method for poaching large quantities of eggs: kzbin.info/www/bejne/laSqd62kbMiGZs0 It's not to say that other people shouldn't sous-vide their eggs. I just found that once the novelty wore off, I stopped doing it ;)

If I may be so humble to offer a tip to an experienced chef… This might be something you haven’t heard of before, but I came across this tip in a video and I found it to be _SUPER_ helpful for a kitchen tool! The tip is to go buy a small keychain ring from your local hardware store and attach that to the end of your whisk. It speeds up whisking time _INCREDIBLY!_ Why it does this and is so helpful, you would have to ask a physicist or something, but believe me that it really _DOES_ work! P.S. 06:55 How on earth would that tool core an apple/pear?! Lol. It’s not a cylindrical shape.

That drawer is a criminal waste of precious kitchen space! A carpenter will trim and rout the front for you and reduce the drawer width to clear that oven handle. Couple hours work. Worth every penny. I’d do it for you but Sydney is a long way from Boston:)

kitchen tweezers - do you want to take out a few olives or peppers from the jar, pickled cucumber in a barrel? The basic equipment of the fermentation station. Do you want to arrange decorations on the cake? Best thing. P.S. I stuck sticky notes with dates on my parents' kitchen utensils, when they use something, they have to peel it off. Now we find cards on things 5-7 years unused. All the time I can't convince them that they don't need these things and they should throw it away :(

I would cut out the offending corner of the drawer front, not pretty but functional. Also, you are lacking chopsticks in your spoons and spatulas jar, so good for stirring small quantities, keeping pasta from sticking, stirring soup, easy clean.
