Thanks for the recipe. I wonder if it would be better if I boil the beef first in water and remove the scum before adding the marinades and sauces. Perhaps that will result in a less "scummy" looking sauce?

Yes Koreans have a similar braised short rib dish. Most of the Korean recipes require a quick pre boil of the beef. And a rinse to remove the scum. A really clear sauce in the end.

Thank you for your question. Yes, surely you can blanch the beef for 2 minutes to remove its smell and scum for better results. It depends on the quality of the beef that you use. I used miso paste and condensed milk in this recipe, so the broth is not clear. Hope you like my recipe, try it out give me some feedback!

im curious about the jujubes.... here in canada jujubes is a sugary gummy candy for kids but this looks like some kind of fruit?

yes, its a type of dried fruit. Also more commonly known as "Red Dates" in Asian cooking.

Jujube fruits are small and sweet. And yes the dried form have a chewy texture and taste similar to dates. You could look for "Chinese dates" in Walmart.
