Having lunch of dinner in a place surrounded by nature is the one thing I miss about the Philippines. My wife and I will head out to Dumaguete someday and go to the places you've been to. My advise for sinigang: it can get really sour depending on the one who cooks it. So if you want to try it in Manila area, look for Filipino restaurants as they can adjust the sourness to your taste. Ask if they can make it not too sour because it will be your first time. Start on pork sinigang. It is really a shocking experience for first timers but eventually after about three times of trying, it will be really delicious because it makes you salivate. Always pair it with plain white rice to counter the sourness. As you become accustomed to sinigang, you can now explore the level of sourness. Eventually you try cooking it and adjust it to your liking. The best sinigang is the one you personally cooked.

Since you guys are going to visit BGC, Makati, then don't forget to visit Venice Grand Canal Mall in Taguig. Btw, tocino is just sweetened meat. You can buy pre-made tocino, you just have to cook it. I think the most famous brand is "Pampanga's Best" and "CDO Funtastyk". They both have many processed meat products like tocino.
