Caldereta is truly delicious. When I was a college student in Manila in the early 2000s, caldereta was what I ate daily at an eatery near my dorm! It was their star delicacy and you could order half of it for just P10 pesos. Eating at an eatery has its own charms. It can be exciting checking out various viands in those neat, stainless steel food containers and it's a plus if the location is well-ventilated and tidy like this eatery you went to. Anyway, thank you for sharing, as always. I hope the Wonderful Kim Family gets to try out more Filipino foods next time. :)

What you are talking about is ACHARA(pinoy kimchi). Its true that it takes the oiliness of food.. it can be sweet sour and spicy.. it depends on your taste.. main ingredient is PAPAYA..

That thing ypu ate that's like kimchi is called Atsara (papaya relish). It's It's a Filipino relish made with green papaya, carrot, bell pepper, ginger, green chile peppers, and sometimes raisins.

4:48 pork steak don’t have vinegar. The sour taste is from calamansi. Pork steak have soy sauce and calamansi while adobo have soy sauce and vinegar.

that is pakbet, cooked different kind of vegetables like, squash, sitaw (string beans), okra, eggplant, how to cook just bokkeum it (stirfry) with garlic onion tomato and philippine sewoojoot called bagoong alamang and put a little sugar to balance the salty taste you can add pork also

It's called atchara. Maybe ask next time you go to Market ask the vendors if there's one the sells atchara. Or could try to find if its available in supermarkets as well, like in SM here in our city it sells atchara.

Pork Steak (or what is usually called as Bistek) is a tamed version of adobo. Adobo is vinegary and salty. Pork steak (Bistek) is on vinegary and sweet side.

The pork steak you have eaten has been marinated in kalamansi not vinegar. Pork steak has a sour savory taste because of kalamansi.
