The singing at the end sounds much better with an instrumental backdrop, I kinda wish they had it in the film.

This version is incredibly smooth! I wonder why they decided to abandon the use of the keyboard in the final film, opting for an orchestra and percussion instead.

fun fact, we can also hear Aaron Paul's original voice lines for that scene, before it was redubbed for the final release

I noticed the full soundtrack has a different pitch to the finished film or was it my DVD that had the pitch raised up in the full audio?

Official DVD releases did that to almost everything at the time, as well as TV broadcasts and such, because different regions had different video formats (PAL, NTSC, this kind of stuff), and were often retimed to fit the "frames per second" standard of each region, but with the speeding up of the footage, sound was also affected. Relatively recently it was figured out how to speed up the video for those releases and TV, without increasing the pitch of the audio. That's why the CD releases of the soundtracks are important if we want to listen to songs from TV shows/movies in their original form.
