I think a good additions to the road would be: occasional enderchests and crafting table stations. Also some areas for little stalls for temporary stores would be cool. I also think encorperating some sort of game into the road, like the treasure island. Cosmetics wise, add some sewer entrance looking things. Maybe put some road signs indicating which stores are in a certain direction. barrels with smoke coming out of them could be interesting for your totally normal road. Probably for lighting purposes, of course. I would think advertising your store all over the road would be hilarious, by building billboard like structures. Hope at least one of these ideas gets used. Would be really cool!

Canals look cool, very original, and some locks adds a redstone aspect. Some boat dispenser/destroyer stations would probably be a good idea seeing as most hermits don't carry boats with them.

i would recommend using player detectors to start/stop the mine-carts, just to try to make it more load/unload friendly as well as try to lag proof it. also defiantly think that hermits browsing the shopping district is the way to go for the heads, it adds ambiance.
