I build in the exact way you do: I already know what block pallet I'm gonna use, and I have no idea what the walls and shape of the build will be. the only pre planning I do is when the 4 corners are being made, I figure out room structure and room direction. but pretty much only ever the bottom layer or rooms

I have been trying a lot planning and putting myself into Minecraft projects, which turn to nothing in the end, that I've decided I can just build for fun, not by idea and with goal. And it helps a lot. My building has been improving as I just start from scrach and stuff comes to my mind. This type if building is usual for build battles, where you have no time to plan and think. You just imagine and build. And so there is no turning back. You go with what you've done, then continue. P.S. love ☺️
