Had no idea how this was done! Isn't there a risk of rocks getting between the rail and wheels, causing derailment of some sort?

Ballast isn't that large. A train of this weight and speed would more less reduce it to sand. This isn't a light weight passenger train at 150 kph. I also think there is a deflector behind the spout.
