Hibiscus Berry Green Tea Mead - How to Make Your Own Mead at Home. This is from a tea sent to us by a fan. It smells amazing, fruity, floral and hibiscus... how can it go wrong? This mead is so easy to do, and it's a great mead for a first time brewer too.
Mead is a very old traditional drink of fermented honey. It's also one of the easiest wines to make at home aside from juice wines. Get a good quality honey is the best advice I can offer, but so long as it's pure honey, even grocery store fare will do the job. If you know an apiary, that's the best way, local, pure honey is amazing for making mead.

This and a few other of your videos are the reason why I've become obsessed with hibiscus! Basically, now I'm putting it into most of my red berries meads, I love it!! Oh and you two are to blame for my house not so slowly turning into a meadery/winery! Lol! I've been driving my wife nuts, since in the beginning one or two one gallon demijohns, were cute. However....that quickly turned into more demijohns, bigger demijohns, a growing collection of brewing equipment and me invading more and more space with vessels of various sizes going; bloop, bloop, bloop! 😂😂 The only thing that's saving me, is a growing collection of bottles with the nectar of gods in them! The next brew I'll make is inspired by this for sure...it is going to be a rosehip and hibiscus flowers tea mead!

Plate of shrimp!!! Last time I was at my favorite grocer (a few weeks ago now) their dried hibiscus flowers were calling to me. "Forget the berries, Danny. Make mead with us forever...and ever...and ever..." I resisted their urging and went home to brew a blackberry/blueberry melomel (which I plan to rack into jugs tomorrow). And here you are now, posting a video about brewing a mead with berry-hibiscus tea...

I've made of 2 batches of hibiscus mead with strawberries in secondary. It's quite delicious. 71b is one of my favorite yeasts for mead.

I made a hibiscus hops mead. It has been by far my favorite. Everyone who drank some was blown away. Since I had only made one gallon and It didn't last very long. I have 5 gallons sitting in CONDITIONING right now. Hoping to gift some out for Christmas.

On the airlock subject, I've broken a few of them because they get stuck in the grommet after sitting awhile, I have a keg system for my beers, so i always have a tube of keg seal lubricant on hand, makes removing airlocks from the grommets effortless, no more broken airlocks.

I've been brewing for 18 monthes and have broken 2 air locks. I ALWAYS use an air lock. I like watching the bubbles! My wife thinks I'm nuts!

@@popefacto5945 One was stuck in the cork and when I finally got it out it snapped. The other one must have been cracked already because I just pulled it out and it was broke. I have a tendency to push the air lock too far into the cork. Need to work on that.

@@seufererfamily I'm breaking myself of that habit, too (hopefully without breaking any airlocks in the process). I recently got silicone stoppers for my one-gallon carboys (Carlo Rossi jugs) and they're so tight that I can barely get the airlocks in past the point where they're tapered. That oughta help. I enjoy watching the airlocks gurgle, too.

We use hibiscus for herbal treatment hair growth. Nice to hear that wine can be made out of it.

As I was getting the Earl Grey tea out of the kitchen cabinet this morning, I saw my container of berry tea... and wondered if that would work in a mead. It’ll be interesting to watch the follow-up of this one... some time later during my mission to see your brewing videos in chronological order of posting! Hey Brian & Derica, I decided to make a hibiscus mead using the recipe of the Blueberry Hibiscus mead you had posted, just without blueberries. It's a 1gal batch. Half a gallon of water was brewed with 4oz of hibiscus for around 10-15 minutes. I aimed for 3.5lb of wildflower honey, but an accidental over pour resulted in 3.67lb. The rest of the gallon was topped off with water. The starting gravity was 1.130. I pitched Lalvin 71B once the must was at room temp. Last week, after 3 weeks of fermentation, my gravity dropped only to 1.076, ~7.3% ABV. I am letting it sit and will be measuring the gravity again this week. However, if it doesn't ferment further, I am at a conundrum. I like the direction the flavors are taking, but it's way too sweet (almost syrupy tasting). I don't know if adding more yeast will help fermentation to naturally reduce the sweetness, and I don't know if fortifying a brew would cut the sweetness. What would you recommend in this situation?

I love Hibiscus tea so I thought I’d make a batch of this for my next project. As several others have pointed out the tea you used doesn’t appear to be readily available. Do you remember what berries were in the tea. Want to see if I can make something close. Love these videos. Can’t wait for the new ones to come out.

Great video. Thanks for all the work you put into these. While I'm sure you have no shortage of things to try, I think this recipe would do very nicely with cranberry blossom honey. Taste and aroma are like mixed berries and the color is slightly red. Again, thanks for the fun video.

Hi Brian and Derica, by chance do you happen to know how many ounces of tea were in the bag? I want to make a gallon of this mead and will probably do a third of the three kinds of tea, but I have no idea how much total tea you are using. I am happy with an estimate. I'm using fresh orange blossom honey for my batch. Oh my gosh, I just noticed your Van Gogh shirt in the video! Excellent! I need that for the museum next week! I have a Van Gogh shirt I'm going to wear, but I like yours a lot.

Hi - This looks yummy! Do you know what kind of tea that wasfor the Hibiscus Berry Green Ted Mead? Looks like the link is broken at this point. Thanks so much for all that you do and show us. New to brewing so these videos are helping me learn and bonus not as many preservatives and other "stuff" in the brews.

After my latest brew blew out like crazy I am now building a blow off jar: Two grommets in the lid of an old peanut butter jar. One for the tube comming from my fermenter, the other for an airlock. All foam will be captured by the jar while CO2 can escape and nothing can get back in.

You don't need the airlock at all, just the tube from the fermenter into a jar of liquid with a few holes in the lid to let the CO2 escape, the grommets are not needed unless you re-routing the CO2 to a green house or plants. Just make sure the tube is under the liquid in the jar. Airlocks are as rare as chicken teeth here in South Africa because of the alcohol sales ban we had during lockdown so this is the quickest and easiest method I've found to use. Another bonus I found is that I can connect a few fermenters at a time to 1 jar. So lots of bubbles to watch.

@@barryhillier2283 Yes, that will work too. But if, for whatever reason, your vessel pulls a vacuum it can potentially suck up liquid from the jar. In my setup that is impossible.

You're probably tired of me always posting on older videos, but I have to say, the re-watchability (is that a word?) is so strong in all of your content. On to my question: I found this because I just got some hibiscus and I wanted to add it to a beer I made in secondary. I have 2 ounces of leaves and was planning in making a strong cup of tea to add to a 2 gallon batch of beer. I want the berry/floral notes (it's an IPA) but I don't want a pink beer, I want a vibrant red. What has been your experience on how much to use to get that vibrant red color? I'm headed over to the viking blod clone next as I know you used hibiscus in that, too.

I would use an ounce in like 6 ounces water per gallon. Also, I don’t mind posting on older videos :). We see the conments all the same. Makes me happy people still find them useful.

I have been having a lot of issues with D-47 lately as well. Talked to a few other and it seems like it is common right now. Going to get a hold of them later and see if they can give any info on what is going on.

You know. I alternate between green tea with acai and with goji from Republic of Tea. I bet that those would work well with locust honey. Ironically enough. One of the biggest videos I've ever posted on here was like :30 of CO2 going through an air lock.

Hi, I´m gonna try something different, replacing honey for organic sugar cane (the real brown one..looks like wet sand) and making something like honey -indeed there´s something like that named "miel de caña" / sugar cane honey. I´m wondering to use wax for sealing the joint between the container cap and the airlock. Thanks!

Have you done an experiment of full pack of yeast vs half package of yeast? Looking for what is the better finishing flavor? As speed is not a concern when it comes to Mead in my opinion. As Mead just gets better with time. Thanks you for all that you guys do!!!

There will be absolutely no difference in flavor or alcohol content. Yeast builds up a colony when it is added to a brew, so, the MOST difference you will see is it MIGH start a little faster, but... we're talking hours different, not days.

@@CitySteadingBrews do you believe this is true in high gravity ferments too? Is there ever a case where pitching more yeast allows you to reduce potential stress on the yeast and get a cleaner ferment? I am very close to adopting the Brian rule of full package and half package. As anyway around it you are still over pitching the yeast if you are doing one gallon fermentations.

For super high gravity it could simply mean that more yeast aren’t shocked by the high sugars, but it won’t ferment any cleaner no.

Brian C Idocks, I see in several videos you sometimes use a wide mouth 1 gallon jar. My question is, is it actually 1 gallon like a normal gallon carboy I usually use that's common from brew stores. Reason I ask is i like to make gallon batches and i worry about too much head space after I rack it from primary fermentation vessel.

I saw a fella use a fish tank aerator to oxygenate his must for around an hour; guess it works for him. He said he won awards for his mead.

Been watching alot of your videos of late, I've been taking note of the yeast you like to use and I'm starting to release how important that is, I was wondering what is your opinion lalvin EC-1118 for mead making? I'm currently using it in a pomegranate and a tart cherry.

Hi Brian and Derica! Learning lots from you guys! One question I have a cranberry mead and a normal mead which had a lapsang suchon tea as tannins, on the go they have been going for quite a while now! About 6ish weeks! I tried it and the SG still seemed high. The airlock is still bubbling infrequently and there are clusters of bubbles on the surface of the mead. The question is.. are they still going or have stalled? . Will appreciate any help. OG for both was 1.100 albeit the cranberry was about 1.20 but I added more water and yeast after 4 weeks as I removed all the fruit.

To know if they are done... take a gravity reading, wait a week, take another. If they are the same, it’s done.

Take it you get your clover honey online? I'm in orlando and sadly clover is NOT local. Sure wildflower. Gallflower and OB are all standard, but clover.... without paying an arm and a leg I cant get it. Halp?!?

I made a very active black berry mead with bread yeast that is going crazy. I have added a blow off tube and have that going into a covered jar. The liquid that has collected in the jar, can it be added back to my fermentor now that things have calmed down and it has an airlock? Thank you

I wouldn't... it could be contaminated. Unless you had it totally sanitized and whatnot.

Hey Y'all, Thanks for making this video. I have a question in regards to Acidity level when brewing with teas. Are there any concerns when brewing with a tea (like this example) where it could make the acidity level too high and cause the yeast to not start? Thanks,

Can you try making a brew without adding the yeast? Maybe try the "magic stick" or wooden spoon that was used to stir a batch that you have a yeast in it. You know for science.

hey cb. a year ago i made 2 gallons of grape wine. one with the wild yeast just mashed pure grapes and the other was a cheap store-bought juice with bread yeast. the one with wild yeast seems to be getting worst with time it tastes very flat, it don't have the balance between acidity, sweetness, and tannin like the bread yeast one, which was very complex and characteristic lol i was quite confused. why do some wines don't improve with time? thanks.

It's all down to ingredients, and method. No way to say why some do and some don't.

By chance did you guys go back and check gravity again. I did a tea mead and did first gravity reading. 5 days later when checking other meads decided to check this again. It went up 8 points not down. 3lbs honey with tea water in 1 gallon carboy.

Hey what's a good spgr for a dessert mead? would it require a back sweetening. I like semi sweet my mate like it candy sweet.

Starting ir finishing? Ending gravity determines sweetness, I like 1.030 for dessertt sweet.

Yeast Nutrients.. my country (South Africa) is in Lockdown and all brewing shops amongst others are closed till who knows when. Was thinking of making a "quick" simple wine from store bought Juice etc and brewers yeast from the local Spar (We are not allowed to travel far and only for essentials) so was perusing other channels and someone used a tablespoon of Marmite as a yeast nutrient in gallon batch of Pineapple wine he was making. I don't know if you guys get Marmite there, but its very much similar to the inferior Aussie Vegemite (shots fired) as its a brewers yeast extract. Any thoughts on this? I'm seriously considering giving it a go. many thanks

I would like to hear how it goes. Another old replacement for nutrient is to hydrate some bread yeast until is show early signs of fermentation and then heat it on the stove or in the microwave to kill it off. (smell is unappealing) After cooling, add to the fermenter. Yeast are rather cannibalistic.

There is no fun in fermenting without an airlock, or in bigger batches, a blow off tube.(I love watching those bubbles coming out).

My airlock won't bubble and it's been like 50 hours and the brew is fizzing.

Would any flavoured green tea work for a mead? I have some really nice orange and lotus flower green tea that I think would be wonderful in a mead.

Instead of adding more to that vessel, could you have poured that into a bigger bucket and then added more?

can you make mead from any type of thee? or are there some thee's you better not use? also how much grams of honney per liter would I have to use (I know google is a friend on this part but I kinda want comfirmation its the right amount)

You can in theory make mead from any tea, yes, but each one is different so might require different treatment.

This was 3 lbs in a gallon, so that's 1.6 kg in 3.875 liters.

The tea apparently is only available for commercial purchase. We were gifted it. But, I would say hibiscus and green tea could be used instead.

Bread yeast? Yes. But you want to use about half a poind less honey.

i got a question im gonna start doing my first time brewing a mead im useing a tea for flavor but on the box it says something i dont know what it is and well is it ok to use a tea with soy lecithin in it i dont want the tea i use to kill the yeast
