You can use ice cream scoop to scoop out the mixture into the cup. So,when it raise the size and the shape will look the same.

you can replace one egg with 1/4th cup of plain yogurt, i do that all the time while making eggless muffins. it works. this recipe calls for 2 eggs so you can add 1/2 cup yogurt instead! hope this was helpful
