Both of these recipes ended up really good! My favorite was the brownies 😜
Chickpea brownies
1/2- 1 can of chickpeas (blended)
8 dates blended with 1/4 cup plant milk
2 TBSP maple syrup
1 TBSP flax seeds
1/3 cup of almond butter
2 tsp balsamic vinegar (trust)
1/2 tsp baking powder
Chocolate chips
Start by blending your chickpeas.
Blend your dates and plant based milk and combine with blended chickpeas.
add all other ingredients, spread in a pan.
Bake for 12-15 minutes and then let cool in the fridge for 10 minutes.
Cut and enjoy 😋
High Protein Pumpkin casserole
Sauce
1/2 cup pumpkin purée
1 cup of Tomato sauce
Seasoning (italien spices and nutritional yeast)
1/2 silken tofu
1/2 cup of coconut milk
Add plant based milk if desires
Blend you silken tofu and pumpkin purée in high speed blender so get a more creamy consistency.
Add all other ingredients, including blended tofu and pumpkin purée to heated frying pan .
Cook desired pasta on the side and then add to sauce when ready.
Add your pasta to an oven safe casserole disk and add bread crumbles on top.
Bake for 15 minutes and then broil!
Let cool down and enjoy 🎃
