Today we prepare two recipes for medieval mulled wine, called Ypocras and clareya, selected from the Catalan and Castilian versions of the cookbook written by Robert de Nola, lived between the 15th and the 16th century.
Ingredients
Hippocras:
red wine
white wine
sugar
spices (cinnamon, ginger, cloves)
Claretum:
white wine
honey
spices (cinnamon, ginger, cloves, grains of paradise)
