There is an excellent documentary that came out called Light and Magic where Joe Johnston says he was inspired by an image in a design concept collection by Syd Mead for the steel industry in the 60s that was a 4 legged snow cargo vehicle. They then came up with the shape of the prehistoric rhino.

Technically the ATST was introduced in Empire strikes back, there's at least one shot that shows them moving around near the feet of the ATAT, but they weren't really showcased until Return of the Jedi where they were defeated by gummy bears.
