STUFFED ONION! When i was younger my mom had a rule that there was 3 foods i could hate and she'd never make me eat. One of them was bellpeppers, so when my mom made stuffed bellpeppers she still wanted me to feel included so she would make me stuffed onion. Cut the onion in half, remove the center layers so you have about 3 outer layers left. Use the removed onion to make your stuffing base usually ground beef than fill up the onion, and bake it just like youd bake the bell pepper. Its so good.

My mother used to make stuffed onions with the stuffed peppers. They looked so pretty with red, green peppers and the stuffed Spanish onion. This was our favorite supper.

I do love long low and slow sautéed onions and using that a base for a soup or pasta. I used to cook them on the stove for hours and then decide what I wanted to use them in. Reminds me of a cool fall day.

My dad used to cook them just like that, not all the spices but some, and grill them for at least an hour and then we would cut them in quarters and eat them with our burgers as a side or on top of our burgers.

My mom has been doing this for over 30 years. She uses Vidalia onions and it would go on the grill and eaten as a side with steak (usually half an onion per person). Same concept as sauteed onions.

We commonly do that whenever will grill in the summer. We just put a tbsp of butter, s&p. Its so good with grilled steak, pork chops and a baked potato. My mom and mamaw would also bake you an onion if you got sick with respiratory issues.

My family loves cooked onions, but we usually make them like you did as a side with burgers and hotdogs. Google roasted Asiago onions! One of the best onion side dishes ever! I also make stuffed onions. I was making stuffed bell peppers one day and had leftover filling. I cut some large onions in half and stuffed them with the filling and baked. My bunch now requests the stuffed onions over the stuffed peppers.

Sweets I guess the appeal of eating it that way would be you don't have to wait hours for caramelized onions the way that you would when you're making french onion soup & babysit the onions while they caramelize. At least this way you can season it, throw it on the oven, walk away then enjoy. I personally love onions both raw & cooked so I already know I'd enjoy this but there's no reason you can't do this then blend it to make a creamy onion soup, definitely wouldn't be French onion but it would be good for sure.

Growing up my grandad would bite into and eat onions like they were apples. He would share them with me so eating a lot of raw onion isn't really a big deal for me. Though I don't eat them nearly as often as he used to. lol I'm definitely going to try this though.

Haha On a side note, people do tend to see onions as “poor man’s food” but so many dishes(both fancy and frugal) use them as the base flavor that would severely be bland if it weren’t for them.
