Sorry for the English, but can anyone explain why the engineers repeatedly point forward? I've seen a lot of them do that, and I can't figure out why. Is it to acknowledge that they've seen an upcoming signal? Is it a tradition - something not entirely necessary, but just something they do?

It is called "Pointing and calling". You can see the article on Wikipedia. It is for the body work for accurate operation. NYC subway adopted pointing out rules partially.

The form of this train is a special train that has been converted from a train called "Kiha 183 series" for sightseeing and is called North Rainbow Express. However, this train has been retired because it is an old train manufactured by Japan National Railways. Because this train is used as a temporary train, it doesn't run on a regular route. 😊 Thank you for your interest in the Japanese railways as well as in Hokkaido😊 If the abominable virus in China is over, please come to Japan. Please note that this sentence may have a strange sentence because we used the translation app./(^o^)\
