牛柳 500克
巴馬火腿 4片
蘑菇(切碎)400克
蒜蓉 2湯匙
急凍酥皮 1片
芥末醬 2湯匙
新鮮百里香(切碎) 1枝
雞蛋 1隻
黑胡椒 適量
鹽 適量
油 適量
做法﹕
1. 牛柳以鹽及黑胡椒調味,加入少許油以大火煎封四邊;
2. 牛柳趁熱塗上芥末醬,室溫放涼;
3. 把酥皮取出,放室溫變軟;
4. 以原鑊炒香蒜蓉、蘑菇碎及百里香碎至乾身,放涼備用;
5. 保鮮紙上鋪上巴馬火腿,加入蘑菇碎及放上牛柳,以保鮮紙用力捲緊,扭緊兩邊,放入雪櫃冷藏15分鐘;
6. 在另一張保鮮紙上放上酥皮,放上已撕去保鮮紙的牛柳,四邊掃上蛋黃漿;
7. 用保鮮紙將酥皮捲緊牛柳,將兩邊酥皮收妥,扭緊兩邊,放入雪櫃冷藏15分鐘
8. Panasonic「變頻式」蒸氣烤焗微波爐NN-CS89LB選擇「熱風對流烤焗模式」,選擇180℃進行預熱;
9. 撕去保鮮紙取出酥皮牛柳,放在已鋪上牛油紙的燒烤盤上,於表面掃上蛋黃漿;
10. 在酥皮表面輕劃幾刀,加少許鹽;
11. 預熱完成後,放入「變頻式」蒸氣烤焗微波爐的中層,設定30分鐘;
12. 取出後將威靈頓牛柳靜置15分鐘,即成。

Beef Tenderloin 500 g

Minced Mushroom 400g
Minced Garlic 2 tbsp.
Puff Pastry 1 pc
Mustard 2 tbsp.
Fresh Thyme (Finely chopped) 1 pc
Egg 1 pc
Black Pepper Moderate
Salt Moderate
Oil Moderate
Steps:
1. Season the beef tenderloin with salt and black pepper. Add oil to a pan over high heat, fry and seal all sides.
2. Coat the beef tenderloin with mustard and let cool for later use.
3. Take out the puff pastry and soften at room temperature.
4. Pan fry the minced garlic, mushroom and thyme until liquid has evaporated and let cool for later use.
5. Shingle the prama ham on the plastic wrap and spread the minced mushroom evenly. Put the beef tenderloin on top. Roll tightly and twist ends of plastic wrap tightly into a log and transfer to fridge to chill for 15 mins.
6. Place the puff pastry on another plastic wrap. Remove tenderloin from plastic wrap and place on the puff pastry. Brush the four edges of the pastry with egg wash.
7. Then tightly roll beef into pastry, twist ends of plastic wrap tightly and transfer to fridge to chill for 15 mins.
9. Preheat the Panasonic "Inverter" Steam & Grill Microwave Oven NN-CS89LB by selecting “Convection” mode at 180℃.
10. Remove the plastic wrap and transfer the roll to the Grill Tray with baking sheet, brush the roll with egg wash.
11. Use a knife to gently score the roll and create a decorative pattern, sprinkle with flaky salt.
12. After preheat, put the Grill Tray into the middle shelf position of the "Inverter" Steam & Grill Microwave Oven and set for 30 mins.
13. Let rest 15 minutes before carving and serving.
