Hi, what temperature and humidity settings is right for proofing dough with yeast ?

That would be dependent on different factors depending on your recipe. Generally between 70-and 90 degrees on the temp. Keep in mind over 110 will kill active yeast. Humidity can have a big range as well, but 80% is a good start. You should start with whatever your recipe calls for and then tweak from there. Some experimenting is part of the baking process. Hello, both of these cabinets are just for warming and don't produce enough heat to cook rice.

can i use a proofing cabinet in place of a holding cabinet...for fried chicken for example?

Hello, generally yes. With fried chicken you wouldn't want to add water in order to keep crisp.
