I was just searching YT videos on how to can ketchup and I have watched maybe four videos that were top of the search… all of them left the skins on and used a blender to purée them!!! Finally I found a proper video!!

I made the ketchup from the recipe that living traditions homestead put out. And it is the first ketchup to taste like the heinz ketchup that I like. All the others I have tried taste like either BBQ sauce or salsa. So I ended up making 7 batches. Also I bought one of those electric water bath canners 3 years ago after seeing one at the coos county fair. Love it! It Can sit it by my sink and that makes it easy to fill and the spigot on the side hangs over the sink for easy draining. No more lugging that huge pot of hot water to the sink to dump! Or carrying water dripping to the canner on the stove top.

Oh, I am sooo going to make this. I, too, have several #10 cans of whole peeled tomatoes that I’ve been wanting to use. I’m sure we could use tomato sauce too. After my bumper crop of homegrown tomatoes and canning them for sauce, diced, and pasta marinara/sauce, this is wonderful distinction. And wow, the western ketchup sounds great. Thank you, Linda.

Are you saying you did bone broth in a water bath process? I hope you didn't because it's a pressure canned product. Bone broth is a low acid food and must be processed only in a pressure canner.

Looks delicious! Did you know Ball stopped producing those wonderful Sure Tight Band Tightener tools? The current price in your Amazon store is $69. Ouch...when they were still in production they were $14. You mentioned it in one of your videos years ago and I got one then..so glad! Hope they will go back into production on them again with the influx of new canners this year. Thank you, Linda!

I wish we had a Smart and final store! We do have Save-A-Lot but it's a little drive from my house. Walmart is closer but save A lot has some things that I can't get anywhere else so I think I'm going to make a trip over there next week.

When I lived in the UK you could get Curry ketchup and it was absolutely delicious! For anyone who likes curry flavor when you make chicken salad if you add some sweet or mild curry powder that is coronation chicken salad. In England it would have been called coronation chicken mayonnaise. It was for the coronation of Queen Elizabeth's father and mother. It is a very old recipe but it's a delicious change of pace and sometimes we added Curry to deviled egg filling. All of them are delicious! :-)

I’m thinking you can put the spices directly into the vinegar. When done, just strain through fine mesh or gauze into the tomatoes or separate bowl to wait until ready to go in. I’m lazy and cheap, don’t want to fiddle and waste the little bag. Heads up, not sure what your canner is made of, but aluminum and tomatoes do not go together. These are not criticisms meant to be judging. I could never do the complicated process of filming a tutorial, it’s just a case of fresh eyes on a situation or a different perspective. I learned a lot from you, very informative session. I think I’ll make this. Thank you.

I'm glad you mentioned about the canner. It's a heavy steel one from the late 40's. But it's a good reminder for me that when I do any canning with tomatoes I should mention that. Thanks for the reminder.

I need to try several small batches experimenting with the seasoning to find a blend that tastes good yet doesn’t tear up my stomach. Half of the commercially prepared catsup and bbq sauces don’t agree with me. Love the water bath canner.

I have never made ketchup before, but I have made salsa, and understand what you mean by saying it worth it, well, that is true you can't eat store bought salsa after having made your own. I might give this a go.

Me again. Well, today must be one of those days so I apologize at the getgo. I have 6% cleaning vinegar and it is not food grade, nor safe for cooking, let alone canning. So I googled your jug of Vinegar and yes it is 6% which means the 6% acidic level in the vinegar is actually 20% greater than the 5% acidic level in regular white vinegar. Interestingly enough is that I pay $2 for a gallon of 5% and I see that the gallon of 6% is over $20. I found no mention of it being safe for canning, probably because most folks would not be able to carefully convert the amount of vinegar needed minus the 20% overstrength, let alone change the liquid in the recipe after that conversion. And the USDA, or the Ball books, do not address this 6% strength anywhere as being acceptable for canning. Acetic acid is bad news. The use of vinegar has been shown to be harmful to the liver and to the kidneys. Vinegar is also an irritant to the central nervous system. Regular consumption of vinegar can cause low potassium levels and lower bone density. It is also harmful to tooth enamel, interacts with certain drugs, can cause throat and skin burns, not to mention digestive/stomach problems. But using the approved 5% vinegar (and proper water ratio) does not seem to cause these health problems. The bottom line is still: 5% white vinegar is the go to vinegar for canning. Leave the 6% to cleaning jobs. Please don’t be upset with me, this is just my nature. When I went thru the Master Canner’s course years ago I drove everyone crazy. Did you know that cats cannot taste sweet or spicy hot things? You can give them things that have heat in them or sugar and they can't taste either of them. My cat George also loves my marinara sauce and I have seen him eat a quarter of a cup of it at a time and not get sick. But off of him some chicken or turkey and he will run down the hallway. My mother told me I should get him used to canned food because he's never had canned food in his life and he's 14 years old. So we bought several brands and several flavors and I would put one on the plate on the kitchen table which we never used at my house. I would call him to the table he would get up to the plate and sniff it and take off as fast as he could run flying down the hallway! Animals are funny things. :-)

Does it give a metal taste cooking it in the canner. I have always used stainless steel for tomato but have been tempted to use the canner for large batches.

I always thought recanning tomatoes would be just fine but you said substituting the canned for fresh was shown to be ok in the USDA book. I, like you, trust only approved canning recipes, and for the life of me I read and reread the USDA book and could not see any mention of using canned tomatoes. I did see mention of using canned tomatoes in the Easy Hot Sauce and the Cayenne Pepper Sauce. So, this morning I googled it and still could not see any approved mention of using the big cans of tomatoes. I have several big cans and want to make my super dooper BBQ sauce but now I'm wondering about it. Help, and thank you for all your videos. And how's the downsizing prep going? No using something like that to thicken it will create a denser product that won't can the same.

Could you not run the tomatoes through the food mill before you even get started since they are canned and soft anyway. Then you wouldn't have to worry about them being hot.

I'm not really in love with homemade ketchup. It's so inexpensive that I can buy it number 10 can and get like eight pints out of it.
