I grew up in Hawaii eating primarily Asian food. I moved to Texas right before the pandemic and fell in love with a Mexican girl. She has since introduced me to real Mexican food and I ask her constantly how I’ve made it 33 years without fully experiencing this cuisine. These types of stews have changed my life - and I want beans, rice, and tortillas with every meal now. I’ve been ruined in the most glorious way possible and I wouldn’t change a thing.

Ooooo... my neighbor growing up in East Los Angeles used to make a lot of different guiso dishes. I loved staying for dinner after playing with my friends, her children. I've always wished I knew how to make some. Unfortunately, she passed away before I ever had the chance to ask her to teach me how to make some. I'm familiar with this recipe. My dad makes this sometimes but he adds salsa de pato which is tomato sauce to give it some color. It's really good. This is a very quick Mexican meal that's easy to make. I'm going to give your recipe a try! It'll be tomorrow's dinner I'm sure my family will love it!
