RECIPES:
Mini cake
Ingredients:
4 medium size carrots
120 ml freshly squeezed orange juice
80 ml vegetable oil
2 large eggs
225g all purpose flour
1 tsp vanilla extract
1 orange zest
pinch salt
2 tsp baking powder
100g sugar
powdered sugar ( optional )
Instructions:
-Clean and cut carrots and place in blender together with vegetable oil and orange juice. Puree
-In a bowl, add pureed mixture, add the eggs, flour, sugar, baking powder, orange zest, vanilla extract and salt. Mix well
- Scoop the batter into the mold ( cupcake mold )
-Bake for 175°C for 30-35 minutes until cooked through. You can test with toothpick.
-Let it cool down, remove from the mold and sprinkle with powdered sugar.
-Enjoy
Kale and Spinach Pesto with Shrimp
Ingredients:
pasta ( 2 person )
8-10 pcs of shrimp
100 ml olive oil
150g spinach
100g kale
4 cloves of garlic
basil
1 lemon
50 ml raw cashew
salt and pepper
Instructions
- add cashews to the food processor and pulse until crumbled
-add spinach, kale, basil, lemon juice, olive oil, garlic, salt and pepper.
- Pulse until the spinach, kale and basil re Finley chopped and the pesto is smooth.
- You can adjust the taste to your liking
- Cook pasta
- While the pasta is cooking, in a pan, medium heat, melt the butter and add thinly sliced garlic.
- add shrimp and cook for about 30 to 60 second on each side
- sprinkle with salt and pepper, a squeeze of lemon and set aside
-add in the cooked pasta and pesto. mix well
- serve the pasta, top with shrimp, grated parmesan or cheddar cheese and parsley
- Enjoy!

Hi ☺️. The same weather here in Oslo too 😅. But we know that it’s too early and not good for environment for too early spring weather. Easter holiday must have a lot of snow and everybody is going to ski 🎿 😉. After that we are hoping for spring weather 😁

It's warm, not too cold not too hot, just like typical spring weather in Taiwan now. It rains sometimes. My reset routine includes house chores, planning for the upcoming week and some relaxing activities, like movie, skin care or going outside.

It is still winter here in Utah, too! This has been a long winter, with snow from October to March, and still snowing today! I appreciate all the tips you have given to help with the cold and dark in Finland! Where we live is usually cold and snowy in winter, but usually from the end of November to the beginning if March, so it feels longer than usual.

I 100% agree with making your own bread, cakes & pastries because they do have a lot of nasties in the store bought/mass produced items we consume on a daily. Hi there!! it si about 25-30 celsius degrees here, southeast part of Spain. Time to go to the beach! I have not understood why you need sunscreen there, it looks that there is not sun at all (not even in August😅). Perhaps it is different , I know, but when I have visited Finland I did not feel like one needs sunscreen at all.

We had the same thing happen where I am, Wasilla, AK. Snow was melting rapidly, huge water puddles everywhere was in the upper 30s low 40s. Then we're hit with snow for two days. 🙄
