What a great experience and a great video! Please include the water profile/mineral additions in your brew day beeak down video! I'm curious to see what kind of water profile they are using up there. I always target high chloride to sulfate additions, use 30% or more wheat/oats, aim for higher final gravity (1.018 - 1.022), target a final pH around 4.1 - 4.3, and my NEIPAs still seem to fall flat of what some of these pros are putting out for that soft mouthfeel. My flavor/aroma is all there, but I have yet to get that extremely soft, pillowy mouth feel.

Having done the same thing, brewing beer at my local brewery, I can attest to the hop aromas.... I think what it is, is the breweries are getting bags in bulk that are packed at the hop farm, not broken down and repacked by brew stores. I am lucky that I have a good supplier who gets hops super fresh straight from the farm and I get them within days of him repacking, so I get good fresh, vibrant hops at home, most brewers aren't so lucky.

Pretty cool. That would be fun to do. I've been able to brew with a pro on a pro system twice, but never brewed one of the same recipe on my system and did a side by side. Brewing in a professional setting like that was VERY enlightening as well.

Food flavourings seem to be the same that once broken down into smaller amounts for retail there must be a change as certainly from possible multiple package opening. Not ignoring as you've said about commercial batches

I think the sense I get is that there is a big separation between places like tree house and similar large, expanding breweries and the smaller guys. In new england and especially in mass, people are very loyal/supportive of their local places and support them well, so if they are well established with the community and taking up space in local liquor stores they can do quite well.

Awesome vid! Definitely know the fun of getting to do a collab beer with pros. The restaurant I work at was the first account of a smaller, local brewery and we decided to collaborate on one together. Since we're a pizzeria, we naturally did an italian pils. Turned out awesome and I always make time to show up for subsequent batches of it. And because I work in an open kitchen, whenever barstaff/waitstaff tell people that it was my recipe, I stop whatever I'm doing and finger gun at them 🤣🤣

@@jackhandy7237 Basically saaz and a handful of other varieties of hops are high in bound thiols, and adding them to the mash exposes them to enzymes which can separate those thiols from the hops.

Personally I've always attributed the difference between large brewery hops and homebrew was the fact that by the time homebrewers get their 1-8 oz bags the original bags have been opened and revealed several times so the aromas have changed due to the small amounts of oxidation. Who knows. I have no proof but kinda made sense.

I dont think homebrewer hop bags get opened and clsoed several times before being sold. As far as I know they are packaged in the same places the pro hops are

@@TheApartmentBrewer could be. When I order from northern brewer though they are in NB bags vs when I order direct from hop supplies they are in vacuum sealed industry style bags. Could be the fact that they are vacuum sealed.

What about settign aside a fraction of LITERALLY the same ingredients - same bags of malt, same lots/bags of hops, etc. Since homebrew hops get treated as a commodity I find there's huge variation in opening a given bag of Mosaic or Galaxy for example. Pro brewers experience this too but they tend to get contracts with relative consistency, they aren't going "hmm I think I need to re-up my Mosaic for a beer this weekend"
