Homemade Cassava Chocolate Chip Cookies | Gluten-Free and Vegan Recipe
My studio kitchen is filled with so much laughter and EATing. Behind all my recipes I have quite a large team of professionals. Talented humans that are the reason I am in the position I am today.
One team member, in particular, is Lasmini. A beautiful talented woman in her own right that originally was a cleaner for one of my mates. When we first met she only spoke a few words of English - hello, goodbye, good morning and good night. I could sense there was something special about her so as I do, I invested in getting to know her as she cleaned my mate's house. I would always say “How's it going” and she would reply “ya, good”. I remember when I was at the house I would do something silly and I could see her in the corner of my eye laughing, I would always smile back.
She then lost her job and I hired her as a cleaner. Still no English, we managed to get to know each other through our energy. She knew when I say sad, happy, scared or excited. She was always there to celebrate with me and we found a common ground on how to communicate with each other. It was sharing a meal. We would cook together and then sit on the floor and eat with our hands, try to tell stories about all of the things and try to understand each other. She wanted me to speak English to her and I wanted her to speak her language to me…it didn't work, I was useless at remembering the words, but she wasn't she was smart and caught on very quickly.
A year had passed and I got to know her well, she had goals and cleaning was not one of them. She would always say to me “I am just a cleaner” And I would say what else do u want to do, she would respond with “ what can I do”? From there I was like let me train you on how I cook. Time passed and one day she came home and said to me she was pregnant, excited but concerned that she would have no job after the baby is born and she was at a loss for what to do. I remember saying - Why won't you have a job, she said in my experience boss don't take on pregnant people and they sure as hell don't bring them back after the baby is born. I said to her, you have your baby, I will support you through that process and when your ready come back to work and bring your baby with you we will make a bed so she can sleep. Lasmini cried, we hugged and time went on. She had her first child Hiena, and came back to work months later with the baby. And I remember saying no more cleaning, let's work on other things together, so we did. She has been by my side through heart breaks heart surgery, failures, success and all the parts that make up US! Together we are most certainly better. 3 babies later and my dear friend Lasmini is no longer a cleaner. I have helped build a business that consists of slow-pressed juices for retreats, healthy cooking productions for other westerners that come to Bali, and a fermenting business and now she is my full-time Bali PA slash product developer and all round great mate. And by far the best cookie maker I have ever met.’

𝗜𝗡𝗚𝗥𝗘𝗗𝗜𝗘𝗡𝗧𝗦
200g chocolate chips
1 1/2 cups cassava flour
3 tbsp ground flax
1/2 cups oat
1/2 tsp baking powder
1/2 tsp baking soda
1 cup coconut sugar
50ml olive oil
80ml coconut oil
Water, as needed
𝗠𝗘𝗧𝗛𝗢𝗗
In a bowl, mix all the dry ingredients.
Add in the coconut oil and olive oil. Mix well.
Add a little water, as needed, if the mix feels dry.
Make around 40g balls and press hard to shape them into cookies.
Preheat your oven to 130 degrees C.
Bake for 25 minutes.
Let cool and serve.
