By far, the best tasting homemade Bosnian cheese pie (sirnica/pita sa sirom) I've ever made. Nothing beats a delicious food made from scratch especially the Balkan pitas I learned from my mother in law.
Why don't you try this at home? You'll be delighted for sure!
INGREDIENTS:
Dough:
3 cups (435g) flour, sifted
(set aside about 2 tbsp for dusting)
1 1/2 tbsp oil
1/2 tbsp salt
250-280ml warm water (approx.)
Cheese filling:
300g fresh cheese (cottage cheese)
1/2 cup yogurt
2 eggs
1 tsp salt
1 tbsp oil
Bake in preheated oven at 220°C or 428°F for 25-30 minutes. Cover it with foil if top started browning quickly.

SASTOJCI:
Tijesto:
3 šolje (435g) brašna, prosijano
(izdvojite oko 2 žlice za brisanje prašine)
1 1/2 kašike ulja
1/2 kašike soli
250-280ml tople vode (približno)
Nadjev od sira:
300g svježeg sira (ricotta ili svježi sir)
1/2 šolje jogurta
2 jaja
1 kašičica soli
1 kašika ulja
Pecite u prethodno zagrijanoj masi na 220 ° C ili 428 ° F 25-30 minuta. Pokrijte ga folijom ako je vrh počeo brzo pregledavati.

OH what memories!!! My husband is Croatian and his two aunts came and made it at my house. I was amazed that it literally draped off my table like a tablecloth. The filling was different A little as she did the same with cheese and egg but she added sugar and then grated a small apple and then spread it over the dough very thinly. She rolled it the same way like long sausage in pan and then baked it. It was wonderful!!! His aunts are long gone now. My small children then are now in their 40's With their own children. We always remember the Burke at Christmas and Easter. Such a shame but I nor any of the family made it because We could never roll the dough so thin. And didn't even attempt to. I miss them so much and all the Croatian food they made. I can make good sourma cabbage rolls the Croatian way with sour cabbage. Delicious. I loved watching this video for wonderful memories. Tomorrow I am going to call my Croatian relatives to tell them about this. Maybe finally one of us will try!!!!

I am so glad to hear this. I learned to love and make burek ( Balkan pita) from my mother in law with different fillings like meat, cheese, potatoes, cabbage etc. Now I can make them on my own. 😊 They are really such a comfort food. My husband love them so much and always ask for me to make it with meat.hehehe I also just made a video recently and it's filled with potatoes. I hope you can check it out. Thank you so much. I worked with Balkans overseas cooking for the US military. When we had time they would make Burek and other amazing Balkan food. I would come home to the US for vacation and never could get the Burek to work. Our jobs ended 5yrs ago. With your video, measurements & the comments maybe now I might have success. Wow! That is SO impressive. I can’t believe how far you were able to stretch that dough. If you accidentally tear the dough, do you just glue it together with some water or oil?

Thank you sweetie! If that happens, you just go on and try not to make the tear/hole bigger. The technique is to let the oiled dough rest so it is easier to stretch. 😊

What kind of yogurt did you use??

Hello there! I just used our regular yogurt here in Bosnia which has 2.8% fat. It is quite watery is usually used as a drink alongside these pitas. Brand is called Meggle. You can also use any Greek or thicker yogurt if you wish to. Hope this helps! 😊

My husband is Bosnian and his mother recently went back to Bosnia and all he talks about is how much he misses the sirnica pita!! I’m going to give this a try what flower were you using ?

Bosnians take pride in their pitas, specially the ones made at home my their wife, mother or grand mother. I always T500 or is close to all purpose flour. We call it white flour here. I'm glad you'd give this a try!!! 👍😃❤

@@marletteslife ty I've been trying to figure that part out. This will be my first time making pita. My bosnian coworkers use to bring me some and I always wanted to impress them by making it.

@@RDNXHELLFIRE that's great to hear! The secret to making homemade Bosnian pita is practice and figuring out what works for you. If you make the jufka from scratch, you will have to familiar yourself with its texture from kneading to stretching. Also while working on it, make sure that there is no draft in the area, so you'll need to close the windows or door and turn off aircon. The dough needs a warm environment so it is easier to stretch.
