Thanks my friend. It's very educational and a good experience for them to learn. I've taught all of my kids and a few neighbor kids. They helped with 3 hogs this year and asked me every few weeks all year long when we was doing it again.

Tim it is really good, send me your address in private and I will send you a pack. I am currently working on my bacon's. The first 4 came out ok, not super excited about the sweetness level, but I am using a family friends recipe on these 4 and I tasted his and now I cant wait. Makes things a lot easier if you add the spices to the chopped meat. Better distribution and easy mixing. You can even grind directly into the casings and save a step

I have found the flavor loses some in the freezer. Have you found that at all??? If so, how do you correct that?? I put mine in 1 lb bags for myself.

Using those bags, do you get freezer burn after they have been in the freezer? Where did you get those bags? I am going to try this but think the vacuum sealer might work better.... thanks for the instructions, don't have a pig running around outside so I'll have to settle for a pork butt!

Those hams are just now able to be eaten, but I wont eat them until Thanksgiving, and Christmas so they get the 4 seasons age and they will be perfect.

Its a lot easer to season the meat before you grind it it makes a lot better blend.

man, you need to invest in a stuffer! i went years without one and when i finally broke down and bought one it sped things up tremendously!! i got a 15# stuffer from hakka brothers off of amazon! love it and all the features of a high dollar one and actually more

Tristan Dietz you are right. We need one. We had an old one that we lost the nut to and couldn’t find one to replace it with. So it was useless to us. But we are about to start on a process room and we will be set up.

We raise Yorkshire Duroc mix both of pure breed. Moms Yorkshire dads duroc. Makes for some good eating. Or should I say we formally did. We have either sold off or butcher them over the last year. We've just sold our homestead and are starting over in the next month. Once we get set back up I hope I can put two of our offspring up and maybe bring one out to you and one over to Terrell.

MSG is a naturally occurring thing. Some are sensitive to it but it is not a hazardous ingredient.

Well thank you for answering my question and if you can send me those ingredients and I'll figure out how much to add to this and how much of that and like you said to taste and I'm surprised my brother-in-law to shop and yet he said oh you don't put sage in there and I said oh yeah you do I said everybody I've talked to use a stage and all the videos I've seen with the exception of Martha Stewart which isn't worth a crap I didn't say sage but most everybody else said so thank you very much for your effort and if you find that receipt and you know what's in there send me an email thank you

REBCCA RAE I will get a bag of the premix we use and post all the ingredients that are in the mix. I don’t have the receipt on how they mix the amounts they use, but we have made our own yrs ago as we mixed it ourself. I will also see if I can find that receipt. We put portions together that we thought and the made a few patty’s and tried it and then added what taste we felt it was missing. Took a long time but it turned out wonderful.

60/40 meat. I wish I could find 70/30. I add 3 oz. beef fat to every lb of port shoulder. I can't even find pork fat and beef fat is hard to find.

You need a stuffer and a bigger grinder. A good size stuffer would make your job easier. Don't buy premixed seasonings, it a waste of money. Find yourself some good recipes, don't be afraid to experiment a little bit. You'll get better results, and you will know what spices are in your sausage.

For the last 50 years I have never ground meat twice. I don't see the point to it. When ground and seasoned sausage is frozen, the seasonings deteriorate and become noticeable after about a month.
