My favorite tortilla story. My husband worked with a group of Hispanic people. Everyday they brought tortilla dough to work and cooked them fresh. He fell in love with them and asked if I would make some. So I found a recipe and jumped in. I made several dozen and had them stacked up when he got home from work. We were both excited about them. They looked so good. He bumped the stove and a couple stacks fell over and hit the floor. They shattered like fine China. Lol. We laughed till our sides hurt. We soon after moved to Guadalupe CA. It is predominately a Hispanic town. Great people and neighbors. Once settled, I decided to try again. Lol I looked like the pillsbury dough boy. I had flour from one end of that kitchen to the other. It looked like a flour explosion had taken place. The doorbell rang and the lady across the street came over to introduce herself. She took one look at the kitchen and asked what I was making. I told her tortillas. She went to the kitchen, cleaned it up, pinched my dough and told me to roll it into small balls with oiled hands. She then proceeded to make them all in just a few minutes. They turned out great. I made homemade bread daily. My neighbor made tortillas daily. She never had luck with bread, so we made a deal. I made her a couple of loaves each day and she made me a couple of dozen tortillas daily. A win, win. I have since learned how and loved them.

Before I met my husband, he lived in a labor camp and learned to use a piece of broom stick to roll out the tortillas. He got them nice and thin. I can roll out beautiful pie crust with a rolling pin but I can't get tortillas to roll out to a decent size. They keep shrinking. My husband couldn't roll pie dough for anything. He just had a sticky mess. Guess we had our own talents. We used to make beef and bean burritos. He grabbed two out of the freezer every morning and placed them on the exhaust manifold of his tractor. He had a hot lunch at noon. Our kids grew up on peanut butter and jam wrapped up in a tortilla. 😊

They keep shrinking because of the gluten. You need to let the dough rest a few minutes after making the balls so the gluten relaxes.

I finally found success with the recipe from 1870's Homestead KZbin. I use soft white wheat flour(home ground) instead of all purpose flour now. Also have found using a small pastry rolling pin gets them thinner than when I used a regular rolling pin. Like how you used an electric griddle. Will have to try it.

I am Hispanic and both my Parents are from New Mexico. There were 11 of us at home and tortillas were our "bread". We made them 3x a day. I have been making them for 55 or so years. We started very young! I have taught all of our Daughters how to make them and now they are teaching their kids. Now that there is just the 2 of us, I have learned to make just 4. I broke in a comal for our Daughters to take with them when they left home. I have special Bolillos I use only for my tortillas.

I have never learned to make my tortillas round, for years I would use a plate and cut them round before cooking them. One day one of the farm workers caught me making tortillas, he said do worry if they aren't round, they don't go down rolling anyway. 😂😂

Im from Az and currently live in NM we dont make them like that we do not use baking powder . 2 cups flour 1 tea salt 1/3 cup lard butter shortening which ever you have and warm water the water may and will vary depending on time of year .

I would love to see you make Lefse! The first time I ate a flour tortilla I said. “this Lefse tastes weird!” The look the same, but Lefse is made with potatoes and cream in it, and you roll it out so thin that you need to roll it onto a flat stick before putting it on the griddle. It’s interesting to see how many cultures have a flat bread !

You should make Norwegian Lefse sometime. It’s a potato based flat bread similar to a tortilla. Another great fiat bread is seed bread - very easy.

Have you tried to make a type of fry bread with that recipe? The two changes are to cut the fat in half and deep fry the bread. You can either leave them as a savory bread and are amazing with pinto beans, or you can sprinkle with cinnamon sugar (Sopaipilla).

Yes, once you eat a real homemade tortilla, you can never go back to store bought! The store bought tortillas even have an odd smell, in my family's opinion. If you want to keep them kosher, you can use solid coconut oil in place of the lard. My husband uses olive oil, and they are still very tender. Now, what I still need to perfect is keeping them round. I call mine "amoeba tortillas." Once you roll them into a burrito shape, though, you can't tell the difference. 😂

Rolling out tortillas is no small feat.Too much for my old arms. I bought a tortilla press. I can really tell a difference between home made and store bought. Big difference. Home made is so much better.

I saw a tortilla press in store but thought it was frivolous. Since my hand rolled ones aren't perfectly round, I will buy the press and try it. But I love having tortillas on hand. My grandkids call them roll-ups. They love plain cheese or Nutella or melted butter sprinkled with cinnamon.

I'm not your doctor, but I want to warn you that, yes, you can make bread products without salt, but they will be sad and flavorless. I think double checking with your doctor is a good idea, and if you can, maybe halve the amount of salt in the recipe and try to reduce elsewhere in your diet. They are going to taste horrid without any salt at all.

Yes, you can make bread without salt. And if you eat it with something spicy, the boring taste won't matter that much. The consistency will differ a little, too as salt supports gluten development. I had a look at the recipe and assume that ordinary table salt was used. Half a tsp would be 2,5 g, which gives about 0,4g pr tortilla. That should be fine for a salt restricted diet which allows 5g pr day

Unfortunately my mom has heart and kidney issues and can only have 1500 mg per day. We make as much from scratch as we can. The Taco Bell brand has a hard shell with 0 sodium, but it’s been hard to find a 0 or low sodium brand of tortilla.

@@cathysims6511 1500 mg sodium equals 4g salt. That's doable if you read nutrition labels carefully and avoid processed food as much as you can. I am on salt restriction myself and can effortless keep my consumption below 5g. Storebought bread with max 1% salt, very little deli meat, no boxed food, very little take out, "problematic" food and the occasional sin in small portions. Conversion formulas for nutrition labels and recipes: salt g = sodium mg * 2,54 / 1000 sodium mg = salt g / 2,54 * 1000 All the best wishes for your mom.

Why do you puncture the tortilla when it puffs up? From all KZbin videos I've watched (many authentic), puffing up is the GOAL when making tortillas. I'm so confused!
